Broccoli Cheese Soup

1. Melt 4 tablespoons butter in heavy medium pot over medium-high heat
- 4 tablespoons butter, room temperature
- 1 1/2 pounds fresh broccoli
- 1 large onion, chopped
- 1 carrot, sliced
- Salt and freshly ground black pepper
- 3 tablespoons all-purpose flour
- 4 cups low-sodium chicken broth
- 1/2 cup cream or 1 cup of milk
- 1 cup of shredded cheddar cheese
Farro and Pine Nut Salad

If you choose a grain other than farro, your cooking time will probably be different
- 1 cup farro (or another whole grain, such as wheat berries, barley, or brown rice)
- salt
- 1 clove garlic, unpeeled
- 1/4 cup pine nuts
- Juice from 1 lemon
- 1/2 small red onion, very thinly sliced
- 2 large heirloom tomatoes, chopped, or 1 pint grape tomatoes, halved
- 1 small cucumber, quartered and sliced 1/8-inch thick
- 1 (15-ounce) can chickpeas, rinsed and drained
- 1 cup feta, crumbled
- 3 tablespoons extra-virgin olive oil
- 1/4 cup chopped fresh parsley
Slow Cooker Beef Stew I

Directions Place meat in slow cooker
- 2 pounds beef stew meat, cut into 1 inch cubes
- 1/4 cup all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1 clove garlic, minced
- 1 bay leaf
- 1 teaspoon paprika
- 1 teaspoon Worcestershire sauce
- 1 onion, chopped
- 1 1/2 cups beef broth
- 3 potatoes, diced
- 4 carrots, sliced
- 1 stalk celery, chopped
Oatmeal Butterscotch Cookies

- 3/4 cup all-purpose flour
- 1/2 tsp. baking soda
- 1/2 tsp. ground cinnamon
- 1/4 tsp. salt
- 8 tbsp. unsalted butter, at room temperature
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1/2 tsp. vanilla extract
- 1 1/2 cups old fashioned oats
- 3/4 cup shredded coconut
- 1/2 cup butterscotch chips
- 1/4 cup toffee bits
Banana Nut Drop Cookies

Preheat oven to 400F. Grease cookie sheets
- •1 1/2 C. Sugar
- •2/3 C. shortening
- •1 tsp. vanilla
- •2 eggs
- •1 cup mashed ripe bananas (3 medium)
- •2 1/4 C. all-purpose flour
- •2 tsp baking powder
- •1/2 tsp. salt
- •1/4 tsp. baking soda
- •1 cup chopped walnuts (optional)
- •1/2 teaspoon cinnamon
Apple Crisp

Directions Preheat oven to 350 degrees F (175 degree C)
- 10 cups all-purpose apples, peeled, cored and sliced
- 1 cup white sugar
- 1 tablespoon all-purpose flour
- 1 teaspoon ground cinnamon
- 1/2 cup water
- 1 cup quick-cooking oats
- 1 cup all-purpose flour
- 1 cup packed brown sugar
- 1/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/2 cup butter, melted
Strawberry Muffins

Preheat oven 400 - line muffin pan with liners 1
- 1 cup strawberries slightly under ripe diced into quarter inch pieces
- 1 squeeze of lemon juice
- 1 cup of flower
- 1/2 cup of sugar
- 1 tsp. baking powder
- 1/4 cup vegetable oil
- 1/3 cup sour cream
- 1 tsp. vanilla extract
- 1 large egg
Terrific Turkey Chili

Directions Heat 1 tablespoon of oil in a large stock pot over medium-high heat
- 3 tablespoons vegetable oil, divided
- 1 1/2 pounds ground turkey
- 1 (1 ounce) package taco seasoning mix
- 1 teaspoon ground coriander
- 1 teaspoon dried oregano
- 1 teaspoon chili pepper flakes
- 2 tablespoons tomato paste
- 1 (14.5 ounce) can beef broth
- 1 (7 ounce) can salsa
- 1 (14.5 ounce) can crushed tomatoes, or coarsely chopped tomatoes packed in puree
- 1 (7 ounce) can chopped green chile peppers
- 1 medium onion, finely chopped
- 1 green bell pepper, diced
- 3 medium zucchini, halved lengthwise and sliced
- 1 bunch green onions, chopped
- 1 cup sour cream
- 1 cup shredded Cheddar cheese
Mini Mac and Cheese Pies

1. Preheat the oven to 350 degrees
- 1 and 1/2 cups Ritz crackers, crushed**I used one whole sleeve and used my food processor to crush the crackers
- 2 cups white cheddar cheese, grated and divided
- 4 tablespoons unsalted butter, melted
- 4 and 1/2 cups cooked elbow macaroni (about 8 ounces uncooked)
- One 5.2-ounce container of Boursin Garlic and Herb cheese
- 2 tablespoons unsalted butter, cold
- 2 large eggs
- 1/2 cup milk
- 1/4 cup sour cream
- 1/4 teaspoon salt
- Pinch red pepper flakes
- Parsley, for garnish, optional
