- 1 egg whites
- 6 T dried breadcrumbs
- 3/4 t dried basil
- 3/4 t dried thyme
- 3/4 t oregano
- 2 garlic cloves, minced
- 1/2 a small onion, chopped small or grated
- 3/4 t salt
- 1/3 t black pepper
- 3/4 cup Parmesan cheese
- 3/4 cup pasta sauce
- 3/4 cup 2% reduced fat shredded Mozzarella cheese
- Optional: dried parsley, oregano or basil for garnish
Strawberry Shortcake Cookies

Preheat the oven to 375. Line 2 baking sheets with parchment paper
- 12 ounces strawberries, hulled and diced into 1/4-inch pieces (about 2 cups)
- 1-2 teaspoons freshly squeezed lemon juice
- 1/2 cup plus 2 Tablespoons granulated sugar
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon kosher salt
- 3 ounces (6 Tablespoons) cold, unsalted butter, cut into small pieces
- 2/3 cup heavy cream

Heat a medium skillet over medium heat, and add the canola oil
- 2 tsp canola oil
- 1/4 cup diced onion
- 1 fat clove garlic, minced
- 1 tbsp tomato paste
- 1 bay leaf
- 1 can (15 1/2 oz) of black beans, drained and rinsed
- 1/2 – 2/3 cup chicken or vegetable broth
- 1/4 tsp chili powder
- 3/4 tsp cumin
- 1/2 tsp oregano
- Juice of 1/2 lime
- Sliced scallions and/or chopped cilantro (optional, for garnish)
Creamy Taco Mac

Bring a large pot of salted water to boil and cook pasta per directions
- 1 1/4 lbs (20 oz) ground turkey or chicken
- 8 oz dry pasta + 1 cup reserved pasta water
- 1 can (14.5 oz) petite diced tomatoes, undrained
- 4 Tbsp mild taco seasoning
- 4 oz cream cheese
- 1/2 cup sour cream
- 1/2 cup shredded cheddar cheese plus 1/2 cup extra for serving (optional)
- Kosher salt and black pepper to taste
