Red Curry Noodle Bowls with Steak and Cabbage

Preparation Cook noodles in a large pot of boiling salted water according to package directions
- 4 ounces dried flat linguine-width rice noodles
- 2 1/2 teaspoons kosher salt, plus more
- 1 pound flank steak
- 2 tablespoons refined coconut or vegetable oil, divided
- 1 /4 cup red curry paste
- 2 teaspoons freshly grated ginger
- 1 small head savoy cabbage (about 12 ounces), thinly sliced into long ribbons
- 2 1/2 cups low-sodium beef broth
- 1 (15-ounce) can coconut milk
- 2 tablespoons fresh lime juice, plus wedges for serving
- 4 ounces pea sprouts or shoots
- 1 /2 cup basil leaves, preferably purple Thai
- 1 /2 cup mint leaves
- Sliced red chiles (for serving)

1. Using a fork, mash avocados with citrus juice in a small bowl
- 2 large ripe avocados, peeled and pitted
- 1 tablespoon plus 1 teaspoon freshly-squeezed lime juice
- 1 cup cilantro, chopped
- 1/4-1/2 cup red onion, finely chopped
- 2-3 ribs celery, finely chopped (about 1/2 cup)
- 2 large serrano chili peppers, finely chopped
- 1 teaspoon kosher salt
- 2 cooked chicken breasts, skin removed, cubed (about 2 cups)
- Bibb or butter lettuce leaves, for serving

- 3/4 c. + 2 T. unsweetened coconut milk (I used light canned coconut milk)

- 1 3/4 c. granulated sugar
- 3 1/2 tsp. baking powder
- 1/2 tsp. salt
- Seven -Minute Frosting
- 2 egg whites
- 3/4 c. granulated sugar
- 1/3 c. light corn syrup
- 2 T. water
- 1/4 tsp. cream of tartar
- 1/4 tsp. salt
- 1 tsp. coconut extract
- 1/2 tsp. almond extract
- Topping
- 1-2 c. sweetened shredded coconut
Spicy Pineapple Chicken Stir Fry

A no effort sweet and spicy stir fry
- 8 ounces pineapple
- 1/3 cup soy sauce
- 1/3 cup molasses
- 3 tablespoons malt vinegar
- 1 tablespoon ketchup
- 1 tablespoon sriracha (this will be pretty mild, add more for extra heat)
- 2 cloves garlic, crushed
- 1/2 teaspoon grated ginger
- 2 pounds chicken, cut into one inch cubes
- 3 tablespoons vegetable oil
- Some red pepper flakes (optional)

- 10 ounces (2 1/2 sticks) unsalted butter
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon mustard powder
- 1/2 teaspoon seasoned salt, such as Lawry's
- 1/2 teaspoon salt

- 3 cups shredded yellow American cheese

- 1 /2 cup butter-flavored shortening
- 1 /2 cup butter, softened
- 1 cup packed brown sugar
- 3 /4 cup sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 -1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 /8 teaspoon salt
- 1 cup miniature semisweet chocolate chips
- 1 cup milk chocolate chips
- 1 cup vanilla or white chips
- 4 ounces bittersweet chocolate, coarsely chopped
- 3 /4 cup English toffee bits or almond brickle chips
- 1 /2 cup chopped pecans

- Drop by tablespoonfuls 3 in. apart onto ungreased baking sheets. Bake at 350° for 10-12 minutes or until lightly browned. Cool for 2-3 minutes before removing to wire racks to cool completely.
