In a large bowl, combine the yogurt, sour cream, mayo, lemon zest, lemon juice, salt, and pepper and stir to blend
- 1 cup plain nonfat yogurt
- 2 TB reduced fat sour cream
- 2 TB reduced fat mayo
- 1 tsp grated lemon zest
- 2 TB fresh lemon juice
- 1/4 tsp salt
- 1/4 tsp freshly ground black pepper
- 2 granny smith apples, cored and cut into 1 inch chunks
- 1 red delicious apple, cored and cut into 1 inch chunks
- 2 ribs celery, thinly sliced
- 1 cup red seedless grapes, halved
- 1 small head romaine lettuce, cut crosswise into 1/4 inch wide shreds
- 1 TB coarsely chopped walnuts
Pumpkin Mousse Pie

In large bowl whisk together milk and spice
- 1/2 cup cold fat free milk
- 1 TB pumpkin pie spice (may substitute 1 1/2 tsp ground cinnamon, 3/4 tsp ground ginger, and 1/3 tsp ground cloves)
- 1 cup canned pumpkin
- 1 pkg (4 serving size) vanilla flavor fat free instant pudding and pie filling
- 1 tub (8 oz) frozen reduced fat non dairy whipped topping, thawed, divided
- 1 reduced fat graham pie crust
Muffins-Carrot Pumpkin

- 1 ½ c whole wheat flour
- 1 ½ tsp pumpkin pie spice
- 1 tsp baking soda

- 1 c canned pumpkin
- ¾ c honey
- 2 TB applesauce
- 1 TB canola oil
- 1 c shredded carrots

Pot Roast with wine sauce

- 3/4 cup dry red wine
- 1/2 cup water
- 4 cloves garlic, minced
- 2 tsp instant beef bouillon granules
- 1/2 tsp dried thyme, crushed
- 1/4 tsp pepper
- 1 pound tiny whole carrots
- 1 (16 oz) pkg frozen cut green beans
- 2 TB cornstarch
- 2 TB cold water
