Ingredients

  • 1 1/2 cup flour
  • 1 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1/4 tsp ground nutmeg
  • 1 cup sugar
  • 1 cup finely shredded, unpeeled zucchini
  • 1/4 cup cooking oil (I use 1/4 cup apricot nectarine)
  • 1 egg (I use 1/4 cup egg beaters)
  • 1/4 tsp finely shredded lemon peel
  • 1/2 cup chopped walnuts or pecans
  • 4 TB chocolate chips

Preparation

Step 1

1. Grease bottom and 1/2" up sides of 8x4x2" loaf pan; set aside. In medium bowl combine flour, cinnamon, baking soda, baking powder, salt & nutmeg; set aside.

2. In another bowl, combine sugar, zucchini, oil, egg & lemon peel; mix well. Add dry mixture to zucchini mixture. Stir until moistened (batter should be lumpy). Fold in nuts.

3. Spoon 1/2 of the batter into the pan. Sprinkle some chocolate chips on batter. Spoon in rest of batter and sprinkle more chocolate chips on top. Bake at 350 degrees for about 55-60 minutes or until toothpick inserted near center comes out clean. Cool pan on wire rack for 10 minutes. Remove loaf from pan. Cool completely on wire rack. Wrap and store overnight.

*Can substitute apple for zucchini.
