Crawfish Dip Slow Cooker

1. Melt butter in a large sauté pan or skillet over medium
- 2 tablespoons salted butter
- 1/2 cup diced green bell pepper
- 1 small yellow onion, diced (about 1 cup)
- 1/2 cup diced celery
- 3 garlic cloves, chopped
- 1 jalapeno chile, diced
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 2 teaspoons paprika
- 1/2 teaspoon cayenne pepper
- 1 pound frozen peeled crawfish tails, thawed according to package directions
- 8 ounces cream cheese, softened
- 2 cups grated extra-sharp Cheddar cheese (about 8 oz.)
- 1/4 cup heavy whipping cream
- 2 tablespoons Creole mustard
- 1 tablespoon Worcestershire sauce
- 2 teaspoons hot sauce
- 2 tablespoons fresh lemon juice
- 2 tablespoons chopped fresh flat-leaf parsley
- Crackers, toasted baguette slices
Cocktail Meatballs

Heat Chili Sauce and jelly together, pour over thawed meatballs
- 1 bag frozen meatballs
- 1 bottle Chili Sauce
- 1 10 oz. jar grape jelly
- Can use peach preserves or other jellies as desired.

- 2 (8-ounce) cans refrigerated Crescent dinner rolls
- 1 cup mozzarella cheese
- 1/2 cup pepperoncinis
- 1/4 cup fresh basil
- 1/3 pound salami
- 1/3 pound ham
- 1/4 pound prosciutto
- 8 slices provolone, halved
- Salt and pepper to taste
- Olive oil and balsamic vinegar for the dip, optional

Turbo Atkins Diet Soup

In a large soup pot, cook the bacon and olive oil over medium heat for 2 minutes
- 4 slices bacon, chopped
- 1 Tbsp olive oil
- ¼ cup onion, chopped
- 1 Tbsp fresh garlic, minced
- ¼ cup sundried tomatoes, chopped
- 1 cup sliced white mushrooms
- 8 cups chicken stock
- 3 cups water
- 2 cups celery root, peeled and chopped into ½ inch cubes (or cauliflower, jicama, radish, turnip)
- 4 cups cooked chicken breast, chopped
- 2 cups yellow squash, sliced and quartered
- 1 cup green beans, cut into 1 inch pieces
- 4 cups swiss chard, chopped (or collards – NOT KALE)
- 2 Tbsp red wine vinegar
- ¼ cup fresh basil, chopped
- Salt and pepper to taste

Combine softened cream cheese and cheddar cheese, mixing well

- 1 8 oz. shredded Sharp Cheddar Cheese
- 1 Tblsp finely chopped onion
- 2 tsp Worcestershire Sauce
- 1 tsp lemon juice
- dash of Cayenne pepper
- Dash of salt

Instructions: Butter an 8-inch square baking pan and set aside
- CRUST:
- 1 1/4 cups graham cracker crumbs
- 3 tablespoons packed light-brown sugar
- 1/4 teaspoon cinnamon

- 5 tablespoons unsalted butter, melted
- FILLING:
- 1/2 cup (1 stick) unsalted butter
- 6 ounces semisweet chocolate, coarsely chopped
