Labor Day Veggie Burger

- 1 plump clove of garlic, smashed and peeled
- 1 1/2 cup garbanzo beans, cooked
- 1 tablespoon olive oil
- 1/2 cup, cilantro and/or parsley leaves, plus their stems
- 1/2 medium red onion, chopped fine
- 1/4 cup sunflower seeds, roughly chopped
- 1/4 cup zucchini, chopped fine
- 1 1/2 cups bulgur, cooked
- 2 eggs
- 1/2 cup bread crumbs
- 1/4 teaspoon ground cumin
- 1/4 teaspoon cayenne
- Dash of Tabasco sauce
- Juice of 1/2 lemon
- Salt and pepper

- 1 2 pound frozen hash browns
- 8 ounces sour cream
- 1 can cream of onion or celery soup
- 1 stick butter
- 1/2 cup chopped onion
- 2 cup grated cheddar cheese
Baked Portobello Parmesan

1) Position a baking rack in upper third of oven
- 1/2 cup Italian-style bread crumbs
- 1 cup (3-oz.) freshly grated Parmesan cheese, divided use
- 1 teaspoon sweet paprika
- 1/4 cup fresh minced parsley, divided use
- 2 teaspoons kosher salt, divided use
- 3/4 cup egg substitute
- 1/2 teaspoon fresh ground black pepper
- 1 teaspoon marjoram leaves
- 1 teaspoon garlic powder
- 1 teaspoon oregano leaves
- 4 large (5 to 6-inches wide) stemmed potobello mushrooms, brushed clean
- 1-1/2 cups (6-oz.) shredded part-skim mozzarella cheese
- 1 cup commercially prepared "light" tomato sauce
- Cooking spray

- 2 1/2-3 pounds potatoes, roughly chopped
- 1/2 cup warm milk
- 1/2 cup sour cream
- 3/4 cup chopped scallions, plus more for garnish

Corn Chowder

- 2 tablespoons olive oil
- 2 small sweet onions (or 1 large), finely chopped (about 2 1/2 – 3 cups)
- 2 stalks celery, finely chopped, about 1/2 cup
- 1 carrot, finely chopped, about 1/2 cup
- 2 cloves garlic, minced
- 1 1/2 teaspoons thyme, finely chopped
- 1 teaspoon sage, finely chopped
- 1/4 cup flour
- 4 cups (1 quart) vegetable stock
- 1 1/2 pound potatoes, peeled and cut into 1/4” cubes (about 3 large potatoes)
- 6 ears fresh corn (see below for prepping instructions)
- 1 1/2 cups half & half
- 8 ounces sharp aged cheddar, grated or crumbled

- 5 pounds fresh spinach, stems removed
- 1 cup (2 sticks) unsalted butter
- 3 cloves garlic, finely sliced
- 1 pound ricotta cheese
- 2 tablespoons coarse salt
- 1 3/4 teaspoons freshly ground black pepper
- 3 pounds wild mushrooms, (chanterelles, oyster, and shiitake), trimmed, cut into 1-inch pieces
- 3/4 cup Madeira wine
- 1/2 cup chopped fresh flat-leaf parsley
- 4 1/2 cups milk
- 1/2 cup all-purpose flour
- 1/2 teaspoon ground nutmeg
- 1 cup grated pecorino Romano cheese
- 1 one-pound package fresh spinach lasagna sheets
