Caramel Apple Turnovers

- For caramelized apples:
- 2 apples (any kind)
- 2 tablespoons butter or margarine
- 1/4 tsp. cinnamon
- 1/4 tsp. nutmeg
- 2 tablespoons brown sugar
- For turnovers:
- 1 can (8 oz.) refrigerated crescent roll dough or seamless dough sheet
- 1 large egg
- 2 tablespoons water

- rice flour
- oil suitable for high heat frying (refined almond, safflower, peanut, etc.)

- 3 Tbsp. soy sauce

- 1 tsp. sesame oil

Strawberry Cream Cheese Tart

To make the tart shell, whisk together the egg yolk, cream and vanilla in a small bowl; set aside
- For the crust:
- 1 large egg yolk
- 1 tbsp. heavy cream
- 1/2 tsp. vanilla extract
- 1 1/4 cups all-purpose flour, plus more for dusting the work surface
- 2/3 cup confectioners’ sugar
- 1/4 tsp. salt
- 8 tbsp. cold unsalted butter, cut into 1/2-inch cubes
- For the ganache:
- 2 oz. bittersweet chocolate, finely chopped
- 1/4 cup heavy cream
- 1 tbsp. unsalted butter, at room temperature
- For the filling:
- 8 oz. cream cheese, softened
- 1/2 cup confectioners’ sugar, sifted
- 1/2 tsp. vanilla extract
- 2 tbsp. milk or cream
- For topping:
- Fresh strawberries, sliced (approximately 12 oz.)
- Melted bittersweet or semisweet chocolate, for drizzling (optional)

In a large mixing bowl, stir together the yeast and water
- 2 teaspoons active dry yeast
- 1 1/3 cups barely warm water
- 2 tablespoons extra-virgin olive oil
- 2 teaspoons salt
- 3 1/2 cups all purpose (or bread) flour
- 1/4 cup butter, melted
- 1 tablespoon dried parsley flakes
- 2 cloves garlic, minced
- 1/4 cup freshly grated Parmesan cheese

1. Preheat the oven to 375ºF
- 2 lbs. peaches, yellow or white (nectarines would be great as well)
- 3 cups blueberries, washed and stemmed
- 1 tablespoon cornstarch

- 2 cups flour
