BBQ Black Bean Pizza

- 2 cans black beans rinsed and drained(or sub an equal amount of previously cooked chicken for a BBQ chicken pizza)
- 1/2 C barbeque sauce(homemade or look for one that has minimal ingredients)
- 1 large onion(or 2 small), sliced or diced
- 2 sweet peppers thinly sliced(I used red, but any color will work)
- 2 tsp oil
- 2-3 C mozzarella cheese
- Pizza Dough
Cauliflower and Brussels Sprout Gratin

Preheat the oven to 375 degrees F
- 3/4 head of cauliflower, cut into large florets
- 3/4 lb of brussels sprouts, trimmed, and quartered lengthwise through core
- 1 teaspoon of kosher salt
- 4 tablespoons (1/2 stick) unsalted butter, divided
- 3 tablespoons all-purpose flour
- 2 cups hot milk
- 1/2 teaspoon freshly ground black pepper
- a pinch of grated nutmeg
- 3/4 cup grated Gruyere cheese, divided
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh bread crumbs
Oven-Toasted Macaroni and Cheese

- 1 lb dry penne or mostaccioli
- 2 cups heavy cream
- 2 cups whole milk
- 1/2 cup sour cream
- 2 eggs
- 2 teaspoons all-purpose flour
- 2 teaspoons kosher salt
- 1 teaspoon ground white pepper
- 1/2 teaspoon cayenne
- pinch of ground nutmeg
- 2 cups fontina cheese, shredded
- 1 cup fresh mozzarella, shredded
- 1 cup fresh bread crumbs
- 2 tablespoons minced fresh parsley
No-Bake Energy Bites

- 1/2 1/2 1/2 C nut butter(almond butter, peanut butter, sunflower seed butter or any other nut or seed butter. Anything will work here)
- 1/3 1/3 1/3 C honey(I believe brown rice syrup would also work. I’m not sure of thinner sweeteners such as maple syrup and agave though as they may not hold together as well)
- 1 1 350 10 old fashioned rolled oats(you can toast for a nuttier flavor at 350 degrees for about 10 minutes)
- 1-2 1-2 1-2 tsp vanilla
- pinch pinch of sea salt if using a natural nut butter with no added salt
- 1-2 1-2 1-2 tsp your favorite spices or spice combinations(optional)
- 1/2 1/2 1/2 C other addins(any kind of whole or roughly chopped nuts or seeds, dried fruit, good quality chocolate chips, etc)
Vegetarian Chili

- 3 tablespoons canola/olive oil
- 1 medium onion, chopped fine (about 1 cup)
- 1 large red bell pepper, stemmed, seeded, and chopped fine (about 1 1/4 cups)
- 8 medium cloves garlic, minced
- 1 tablespoon cumin seeds or ground cumin
- 3 tablespoons chili powder
- 1/4 teaspoon cayenne pepper
- 1 28-ounce can crushed tomatoes
- 1 teaspoon dried oregano
- 1 tablespoon brown sugar
- 3 cups canned beans, drained and rinsed (1 can of red kidney beans and 1 can of black beans)
- 1 cup frozen corn kernels, thawed
- 1 1/2 teaspoons salt
- 1/4 cup coarsely chopped fresh cilantro
- 1 tablespoon lime juice
- Cheese, optional
- Sour cream, optional
Not so Fried Pickles

- 1 jar pickle slices (we like large, thick slices of Claussen dill pickles)
- 2 eggs
- 1/3 cup flour
- 1 Tbsp Worcestershire sauce
- 1 tsp hot sauce
- 1 tsp garlic powder
- 1 tsp Cajun seasoning
- 1 tsp pepper
- 1 1/2 cups panko bread crumbs
- Ranch dressing + hot sauce for dipping
Vegan Mac and Cheese Pizza

- 4 ounces dry macaroni pasta
- 3/4 cup Daiya Cheddar Style Shreds
- 3/4 cup Daiya Mozzarella Style Shreds
- 1 1/2 tablespoons Earth Balance Natural Buttery Spread
- 1 cup unsweetened rice milk
- sprinkle of fresh ground black pepper
- 1/2 cup panko bread crumbs
- 1/2 teaspoon paprika
- 1 pre-made pizza crust (or you can make your own, more on that below)
- 1 tablespoon olive oil

- 1/3 cup dry couscous
- 1 cup water
- 1 1/2 cups broccoli florets
- 2 teaspoons olive oil
- 1/2 cup chopped scallions
- 1/2 cup chopped yellow onion
- 2 teaspoons ground cumin
- 1 15 ounce can of chickpeas, rinsed and drained
- 1 tablespoon sesame tahini
- 1/2 cup panko breadcrumbs

- 1/3 cup sesame tahini
- 1/3 cup water
- 1/4 cup plus 1 tablespoon fresh lemon juice
