Lemon Tarts

Prepared tart crusts cut prep time for these sweet lemon tarts
- 2 x 275g pkts frozen sweet tart crusts
- 60 g butter
- 100 g (1/2 cup) caster sugar
- 35 g (1/4 cup) cornflour
- 1 tablespoon custard powder
- 250 ml (1 cup) water
- 60 ml (1/4 cup) fresh lemon juice
- 80 ml (1/3 cup) milk
- 1 egg
Green Tea Mousse

Preparation Dissolve gelatine powder in 4 Tbsps of water and set aside
- 1 Tbsp gelatine powder
- 4 Tbsp water
- 2 egg yolks
- 1/2 cup sugar
- 1 cup milk
- 1 cup heavy cream
- 1 Tbsp matcha green tea powder
- 3 Tbsp warm water
Honey jumble cookies

- 1/2 cup honey
- 60 g butter
- 1/4 cup brown sugar
- 1 1/2 cups plain flour
- 1/2 tsp bicarbonate soda
- 1 tsp ground ginger
- 1/2 tsp mixed spice
- 1/4 tsp ground cloves
- 2 tsps milk
- Icing 1 1/2 cups icing sugar, sifted
- 1 egg white
- 2 tsps lemon juice
- Pink food colouring

ROMANO CHICKEN WITH LEMON GARLIC PASTA

ROMANO CHICKEN: Place parmesan cheese in a shallow dish
- ROMANO CHICKEN:
- 1/2 lb chicken breasts (butterflied or thinly cut into cutlets)
- salt and pepper
- 1/2 cup finely grated parmesan cheese
- 1 egg
- dry parsley
- 1/2 cup panko bread crumbs (homemade or store-bought)
- oil for frying (I used combination of olive oil and sunflower oil)s
- LEMON GARLIC PASTA:
- 1/2 lb linguine or spaghetti or other pasta
- juice from 1 lemon, or to taste
- 3 garlic cloves, minced
- zest from 1/4 lemon
- 2 Tbsp butter, cold
- 2-3 Tbsp whipping cream, or to taste
- salt, pepper
