Easy Yellow Rice

Basmati rice cooks super fast and reliably, so this whole yellow rice recipe is done in twenty minutes
- 1 teaspoon ground turmeric
- 1/2 teaspoon ground cumin
- 1 to 2 tablespoons butter or Earth's Balance (for dairy free and vegan version)
- 2 cups long grain basmati rice
- 4 cups water
- 1 teaspoon kosher salt
- chopped chives or green onions for garnish
Chicken Cannelloni

Preheat oven to 180 C or 160 for a fan forced oven The preparation is very simple
- 1 cooked chicken (I usually grab a cooked chicken from the supermarket) and cut into small pieces.
- 2 boxes Cannelloni
- 1 large carton thick cream
- 1 diced onion
- 2 sticks diced celery
- 2 cup diced mushrooms
- 2 diced carrot
- 1 capsicum
- Garlic to taste
- Basil to taste
- Mixed herbs to taste
- 1 bottle (400g) pasta sauce of your choice
- 1 cup red wine (optional hehe)
- 1 cup (250ml) water
- 500 g mozzarella cheese (I have used tasty)

- 1 cup macaroni pasta, cooked, drained
- 2 tablespoons olive oil
- 1 large onion, finely chopped
- 1 large green green pepper, deseeded, diced
- 1/2 pound sliced bacon, chopped
- 1/2 cup can corn kernels, drained
- 1 tablespoon flour
- 2 cups tomato condensed soup
- 1/2 cup light thickened cream
- 1 1/2 cups grated mozzarella cheese

- 150 g butter
- 3/4 cup brown sugar
- 2 tsp vanilla
- 1 egg
- 1 1/2 cups self raising flour
- 1 Tbls cocoa

- 2 tablespoons vegetable oil
- 350 g lean beef fillet, cut into thin strips
- 1 onion, halved and thinly sliced
- 1 large garlic clove, finely chopped
- 300 g Swiss brown mushrooms, thickly sliced
- 2 tablespoons dry sherry
- 1/3 cup (80ml) diluted salt-reduced or homemade beef or vegetable stock

Easy Breakfast Casserole with Sausage, Hashbrowns and Eggs

- 1 pound Italian sausage (I prefer hot, but mild or sweet also work)
- 1 medium white onion, peeled and diced
- 3 cloves garlic, minced
- 1 red bell pepper, cored and diced (or 1 jar of roasted red peppers, drained and diced)
- 6 eggs
- 1/3 cup milk
- 1 (20 ounce) bag frozen hash browns, thawed
- 2 cups shredded cheddar or mozzarella cheese
- 1/4 teaspoon freshly-ground black pepper
