- For the dough:
- 4 cups all-purpose flour
- 3 tbsp yellow cornmeal
- 1 3/4 tsp salt
- 2 3/4 tsp instant yeast
- 2 tbsp olive oil
- 5 tbsp butter, melted
- 2 tbsp vegetable oil
- 1 cup + 2 tbsp lukewarm water
- For the sauce:
- 2 tbsp unsalted butter
- 1/4 cup grated onion
- 1/2 tsp dried oregano
- 4 garlic cloves, minced
- 1 28-o can crushed tomatoes
- 1/2 tsp sugar
- 2 tbsp chopped fresh basil leaves
- 1 tbsp extra-virgin olive oil
- Salt
- Pepper
- For the toppings:
- 1 lb shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- Your choice of toppings (pepperoni, sausage, peppers, etc.)
Double Layer Pumpkin Cheesecake

Preheat oven to 325º. In a large bowl, combine cheese, sugar and vanilla
- 2 - 8 oz pkg cream cheese, softened
- 1/2 cup white sugar
- 1/2 tsp vanilla
- 2 eggs
- 9 " graham cracker crust
- 1/2 cup pumpkin puree
- 1/2 tsp ground cinnamon
- 1 pinch ground cloves
- 1 pinch ground nutmeg
- 1/2 cup Cool Whip, thawed

- 1 14oz can sweetened condensed milk
- 1 jar caramel topping
- 1 8oz tub cool whip
- 4-5 snickers bar, skor, heathbar, or mini reeses
Pizza Spaghetti Casserole

Boil water & salt for Spaghetti noodles, once it starts boiling, add noodles
- 1 lb. Ground meat (you can use turkey)
- 1 16 oz. box uncooked spaghetti noodles
- 1/2 teaspoon salt
- 1/2 teaspoon Oregano
- 1/2 teaspoon garlic powder
- 1/2 Cup Milk
- 1 Egg
- 2 ounces sliced pepperoni (I like Turkey)
- 1 (26 ounce) jar pasta sauce
- 1 16 oz. can diced Italian style tomatoes
- 1/4 cup grated Parmesan cheese
- 1 (8 ounce) package shredded Italian cheese blend
- Any other pizza toppings, you can add like Black olives, sausage, onions, green peppers, etc...
Vietnamese Chicken Salad

1. Bring broth to a boil in large saucepan
- 2 cups lower-sodium chicken broth
- 1 1/2 lb. boneless skinless chicken breast halves*
- 1 cup bean sprouts
- 2 garlic cloves, minced
- 1 to 2 red chilies, seeded, deveined, minced
- 3 tbsp lime juice
- 2 tbsp Asian fish sauce
- 2 tbsp rice vinegar
- 2 tsp sugar
- 1 large carrot, julienned (1 1/2-inch strips)
- 1 medium cucumber, peeled, seeded, julienned (1 1/2-inch strips)
- 1 medium red onion, very thinly sliced
- 1/3 cup chopped cilantro or fresh mint, plus whole leaves for garnish
- 6 romaine lettuce leaves
- 2 to 3 tbspn unsalted dry-roasted peanuts, chopped, if desired

- 12 sun-dried tomatoes in oil, drained and divided
- 2 tablespoons red wine vinegar
- 6 tablespoons olive oil
- 1 garlic clove, coarsely chopped
- 1 teaspoon capers, drained
- Kosher salt, to taste
- 3/4 teaspoon freshly ground black pepper
- 1/2 pound orecchiette or other small pasta
- 1/2 pound cherry tomatoes, halved
- 1/2 pound fresh mozzarella, medium-diced
- 3/4 cup good black olives, such as kalamata, pitted and diced (optional)
- 1 cup freshly grated parmesan
- 1 cup packed basil leaves, julienned

- 2 1/2 pounds fresh cheese curds
- 8 ounces beer
- 1 large egg
- 1 cup pancake mix
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/3 cup mayonnaise
- 2 teaspoons hot sauce, or to taste
- 1/2 teaspoon garlic powder
- fresh parsley, minced, for garnish

Creamy Chicken Enchiladas

- 1 lb ground chicken
- 1 - 10 oz package frozen chopped spinach, thawed and well drained
- 1/2 cup thinly sliced green onions
- 2 - 8 oz carton light dairy sour cream
- 1/2 cup plain yogurt
- 1/4 cup all-purpose flour
- 1/2 tsp salt
- 1/2 tsp ground cumin
- 1 cup milk
- 2 - 4 oz can diced green chilepeppers, drained
- 12 flour tortillas
- 2/3 cup shredded Monterey Jack or cheddar cheese
- Snipped fresh cilantro (optional)
- Salsa and/or thinly sliced green onions (optional)

- 2 cups pasta sauce
- 1 clove garlic, minced
- 8 ounces fresh bocconcini mozzarella or mozzarella cheese, cut in cubes
