Mini Puff-Pastry Tartlets

Cut the pastry into six equal pieces and roll each to a rectangle measuring 9 in
- 3 lb. (1.3 kg) puff pastry
- 1 large yellow bell pepper, seeded and cut into thin strips
- 3 oz. (75 g) Parmesan cheese, grated
- 4 tomatoes, sliced 6 oz. (175 g) goats’ cheese, crumbled
- 6 thin slices prosciutto, cut in half
- 2 mozzarella cheeses, (10 oz./280 g), each cut into 6 slices
- Chopped fresh herbs, e.g. parsley, chives, basil, to garnish

Mix bread ingredients. Knead for 8 mins in ball
- The Dough:
- 1 1/2 cup warm water
- 1 tbsp yeast
- 1/4 cup sugar
- 1 tsp salt
- 3-4 cups flour
- Topping:
- 1/2 cup butter
- 1/2 cup mayo
- 1/4 cup Parmesan cheese
- 1 tbsp minced garlic
- 1/2 tsp dill weed
Chicken And Rice Soup

Season chicken with salt and pepper and set aside
- 8 cups low-sodium chicken broth or homemade chicken stock
- 1 cup water
- 1 cup long-grain white (or brown) rice
- 1 bunch kale, stems removed, chopped
- 2 chicken breast halves, fat trimmed and skin removed
- 2 whole chicken legs (and thighs), fat trimmed and skin removed
- 2 medium carrots, chopped
- 2 stalks celery, chopped
- 2 cloves garlic, minced
- 1 large white or yellow onion, diced
- 2 tbsp extra-virgin olive oil
- 1 bay leaf
- 1 stick rosemary

BLT Dip

Preheat oven to 350º. Spray a 1 1/2 qt baking dish with Pam
- 1 1/2 lb bacon, cooked, drained, crumbled & divided
- 2 cups shredded mozzarella cheese
- 2 - 8 oz pkg cream cheese, softened
- 1/2 cup sour cream
- 1/4 mayonnaise
- 1 cup cheddar cheese, shredded
- 1/2 tsp Italian seasoning
- 1/2 tsp garlic powder
- 1 tbsp mustard
- 2 cups chopped, seeded tomatoes
- 1 1/2 cup shredded iceberg lettuce
- salt and pepper, to taste
- toasted bread rounds, crackers or pita chips
Sweet Potato Crunchies

- 1 sweet potato
- 1 tablespoon olive oil, for a sweeter taste use unrefined (non-hydrogented) coconut oil

- 1 tablespoons honey
- 1 garlic clove, minced

- 1/2 Golden Delicious apple, quartered, cored, diced
- 2 ounces Gruyère cheese, cut into thin ribbons with vegetable peeler
Sweet Potato Pie

Preheat oven to 350 degrees
- 1 unbaked pie crust
- 2 eggs
- 3/4 cup sugar
- 1 5 ounce can evaporated milk
- 3 tablespoons butter, melted
- 1 teaspoon finely shredded lemon peel
- Dash ground nutmeg
- 2 medium sweet potatoes peeled, cooked, and mashed (1-1/3 cups)
Fettuccine Chicken & Tomato Dinner

Prepare fettuccine per directions, cooking until al dente
- 8 oz fettuccine, uncooked
- 2 large chicken breast halves, skinless and boneless, diced
- 1/2 medium onion, chopped
- 2 zucchini (approximately 5" long and 1-1 1/2" in diameter)
- 2 yellow squash (same size as above)
- 1 can 15.5 oz.-diced tomatoes w/ italian seasoning
- 1/2 tsp dried italian seasoning
- 1/2 Tbsp garlic, minced
- 1/2 tspcanola oil
- 1/8 c water
- 1/2 c grated parmesan cheese
Pumpkin Dip

1. Mix pumpkin, pudding mix, cool whip, and pumpkin pie spice together {by hand} in a very large bowl
- {1} 15 oz can of pumpkin
- {1} 5 oz box of instant vanilla pudding {just the powder, don't make the pudding}
- {1} 16 oz container of cool whip {low fat}
- {1} small pumpkin
- {1/2} tbl Pumpkin Pie Spice
- {1/2} tbl Cinnamon
Pork Souvlaki

Mix together all of the ingredients except the pork loin in a zipper-lock bag
- 1/2 cup olive oil
- 1 small red onion, finely chopped
- 3 cloves garlic, minced
- 4 tbsp fresh lemon juice
- 2 tbsp red wine vinegar
- 2 tbsp chopped fresh oregano
- 1 tsp dried mint
- salt and pepper to taste
- 1 1/2 lbs pork loin, trimmed of silver skin and excess fat, cut into 1″ cubes
