In a medium pan over medium-high heat, sauté onions and garlic in 1 tablespoon butter until softened
- 4 cups broccoli florets
- 2 1/2 cups cheddar cheese, grated
- 2 1/2 cups chicken stock
- 2 cups half-and-half
- 1/4 cup unsalted butter, divided
- 2 cloves garlic, minced
- 1/2 yellow onion, finely chopped
- 3 tablespoons all-purpose flour
- 1/4 teaspoon nutmeg
- salt and pepper, to taste
Easy & Healthy Shrimp

No Butter (uses chicken broth, white wine, lemon juice)
- 4 tsp olive oil
- 1 1/4 pounds med raw shrimp, peeled and deveined (tails left on)
- 6-8 garlic cloves, minced
- 1/2 cup low sodium chicken broth
- 1/2 cup dry white wine
- 1/4 cup fresh lemon juice
- 1/4 cup + 1 T minced parsley
- 1/4 tsp salt
- 1/4 tsp freshly ground pepper
- 4 lemon wedges
Garlic and Herb Home Fries

Preheat oven to 425º F. Wash potatoes and cut in half, lengthwise
- 5 russet potatoes
- 3-4 tablespoons extra-virgin olive oil
- 3 tablespoons Parmesan cheese
- 2 sprigs rosemary, stem removed, finely chopped
- 4 cloves garlic, minced
- 1/4 teaspoon paprika
- 1/2 teaspoon sea salt
- 1/4 teaspoon freshly ground pepper
Salmon in a Crust

- 2 - 9 " pie shells
- 2 medium onions, chopped
- 1 clove garlic, minced
- 1/4 cup fresh bread crumbs
- 1/3 cup Parmesan cheese
- 7 1/2 oz salmon, drained and flaked
- 1/3 cup dill, chopped
- 1 cup sour cream
- 1 egg yolk
- 1/4 tsp salt
Asparagus and Herb Frittata

In a 10-inch oven-safe nonstick skillet, heat 1 Tablespoon of butter or margarine over medium heat
- 3 tbsp unsalted butter or margarine
- 8 med asparagus spears, rinsed, woody-ends trimmed, cut into 1-inch pieces (about 1 1/2 cups)
- 1 small red onion, halved, peeled & thinly sliced (about 3/4 cup)
- 8 large eggs
- 8 Tablespoons grated Parmesan cheese
- 1/2 cup fresh parsley leaves, rinsed, dried, finely chopped; if using dried herbs, use 2 Tablespoons
- 2 Tablespoons milk
- 1 teaspoon salt
- 1/2 teaspoon pepper
- Other vegetables can be added to the asparagus and onion before sautéing. Try 1/2 cup of diced bell peppers, mushrooms or tomatoes.
Lasagna Style Spaghetti Squash

Roasting the squash Pre-heat oven to 400 degrees
- 1 spaghetti squash
- 1 lb Italian sausage or any choice of meat
- 2 cups of your favorite pasta sauce
- 2 tablespoons fresh basil
- 1/2 cup ricotta cheese
- 1/2 cup shredded mozzarella cheese (plus extra for topping)

Banana Chocolate Chip Cookies

Preheat oven to 350 degrees
- 3/4 cup salted butter, melted
- 1 cup brown sugar, lightly packed
- 1/4 cup sugar
- 1 tsp vanilla extract
- 1 cup mashed ripe bananas
- 2 3/4 cups all purpose flour
- 2 tsp cornstarch
- 1 1/2 cup semi sweet chocolate chips
Devilled Eggs

- 1/4 cup mayonnaise
- 1 1/2 tsp prepared mustard

- 3 Cups Light Cream
- 2 Cups Milk
