- 1 1/2 cups flour

- 1 teaspoon baking soda

- 1/4 cup brown sugar
- 1/2 cup white sugar
- 2 eggs
- 4 small bananas, mashed (approx. 1 1/3 cups)
- 1/2 cup chocolate chips
- 1/4 cup half & half
- 2 tablespoons brown sugar, packed
- 1 teaspoon butter
- 1/2 teaspoon vanilla
- 6 tablespoons chocolate chips
Pizza Spaghetti Casserole

Heat oven to 350°F. Spray 14-inch deep-dish pizza pan with cooking spray
- 12 oz uncooked spaghetti, broken into thirds
- 1 tbsp olive oil
- 3/4 lb bulk Italian pork sausage
- 1 package (8 oz) sliced fresh mushrooms (about 3 cups)
- 1 jar (24 oz) caramelized onion and roasted garlic tomato pasta sauce
- 4 oz sliced turkey pepperoni (1/2 cup)
- 2 cups shredded Italian cheese blend (8 oz)
- 1/4 cup grated Parmesan cheese

Shanghai Spring Rolls

Peel shrimp, and devein, if desired; finely chop
- 1/8 lb shrimp (unpeeled fresh)
- 1/2 large eggs (lightly beaten)
- 1/8 lb ground pork
- 2 oz water chestnuts (drained and minced)
- 2 oz bamboo shoots (drained and minced)
- 1 garlic cloves (minced)
- 1/2 green onions (diced)
- 1/2 tbsp fresh ginger (minced)
- 1/4 tbsp soy sauce
- 1/8 tsp salt
- 1/8 tsp pepper
- 3 oz spring roll wrappers
- vegetable oil
- sweet chili sauce

Beet Greens

While this recipe calls for discarding the stems, if you want you can use them too if they aren't too woody
- 1 pound beet greens
- 1 strip of thick cut bacon, chopped (or a tablespoon of bacon fat)
- 1/4 cup chopped onion
- 1 large garlic clove, minced
- 3/4 cup of water
- 1 Tbsp granulated sugar
- 1/4 teaspoon crushed red pepper flakes
- 1/6 cup of cider vinegar
Tex-Mex Southwestern Seasoning Blend

- 2 1/2 tbsp chili powder
- 1 tbsp ground coriander
- 1 tbsp kosher salt
- 1 tbsp dried oregano
- 2 tbsp paprika
- 1 tsp black pepper

Cheesy Twice-Baked Potato Mash

- 6 russet potatoes
- 1 cup mini mozzarella balls
- 1/2 cup Gruyere or Swiss cheese, grated
- 1/2 cup Parmesan cheese, grated
- 1/2 cup heavy cream or whole milk
- 1/4 cup (1/2 stick) unsalted butter, cubed
- 1 tsp fresh rosemary, finely chopped
- 1/2 tsp dried oregano
- 1/4 tsp nutmeg
- kosher salt and freshly ground pepper, to taste
