- 1/4 cup Ranch dressing
- 2 tablespoons dill, or thyme
- 4 long cucumbers, skinned and sliced into thirty 1 inch slices

- Additional sprinkle of paprika or a Cajun spice mix, optional for garnish

Salmon with stir fry noodles

First, combine garlic, ginger, white wine, sugar and the soy sauce in a bowl
- 2 salmon fillets
- 3 cloves of garlic, finely chopped
- 1 (5cm) piece of ginger, chopped
- 4 tablespoons sake or white wine
- 3 tablespoon sugar (preferrably brown sugar but caster is also fine)
- 4 tablespoons soy sauce
- 1 tablespoon groundnut oil (vegetable or olive oil is also fine)
- 1 knob of butter
- For the Stir fry noodles
- 2 tablespoon of groundnut oil (vegetable or olive oil is also fine)
- 350 g of egg noodles
- 3 cloves of garlic, finely chopped
- 1 (4cm) piece of ginger, chopped
- 1 medium sized onion, sliced
- 1 red pepper, sliced into strips
- 1 yellow pepper, sliced into strips
- 1 green pepper, sliced into strips
- 4-5 pieces of closed cup mushroom, sliced
- Soy sauce, to taste

- 7 cups apple cider vinegar
- 7/8 cup pickling salt

- 2 Garlic Cloves, Minced

Cut the watermelon into chunks and then puree it in a blender until smooth
- 3 cups watermelon puree (about 1/4 to 1/2 a watermelon)
- 1/2 cup fresh blueberries
- 1/2 cup chopped fresh strawberries
- 1 kiwi, peeled and sliced
- 1 peach or nectarine, diced small
- handful fresh cherries, pitted and chopped
Blackened Fish Taco Salad

Heat nonstick skillet over medium high heat
- any firm white fish (mahi, tilapia, grouper)
- Chef Prudhomme’s Blackened Redfish Magic seasoning
- romaine, torn
- tomatoes, chopped
- red onion, sliced or chopped
- jalapeno, sliced
- avocado, chopped
- corn
- Cilantro Lime Dressing
- 1/4 cup of lime juice and white vinegar combined (1-2 limes, juiced plus white vinegar)
- 1/2 -3/4 cup light oil (I use grapeseed oil, but light olive oil, vegetable oil or canola oil would be great)
- 1 garlic clove
- 1 tablespoon of honey
- 1 bunch of cilantro
- salt and pepper to taste
- Combine all ingredients in blender or food processor. Store in airtight container or jar in refrigerator for up to 1 week.
