- 2 Tablespoons tapioca starch (30 mL)
- 1 Tablespoon granulated sugar (15 mL)
- 1 1/4 teaspoon xanthan gum (6 mL)
- 2 teaspoon bread machine or instant yeast (10 mL)
- 3/4 teaspoon (3 mL)
- 3/4 cup water (175 mL)
- 1 Tablespoon vegetable oil (15 mL)
- 1 teaspoon cider vinegar (5 mL)
- 3 Tablespoons sesame seeds (45 mL)
Coconut Lime Bread

* Preheat the oven to 350 degrees
- 1 1/4 cup flaked coconut, toasted, divided use
- 2 cups all-purpose flour
- 1 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 egg
- 1 cup coconut milk or regular milk
- ¹⁄3 cup butter, melted
- 3/4 cup, plus 1 tablespoon lime marmalade, melted, divided use

- 1/4 cup coconut flour
- 1/8 tsp baking soda
- Pinch of salt
- 1/3 - 1/4 cup coconut milk
- 2 tbsp organic, cold-pressed coconut oil
- 3 eggs
- 1-2 tbsp honey
- 1/2 tsp vanilla extract
- Maple syrup to taste
- Grass-fed butter for cooking (Kerrygold and Anchor are my favorite brands)
quickbread - Skinny Oatmeal Banana Bread

Preheat the oven to 350 degrees
- 1 c. oats, measured then ground into flour
- 1 c. oats, left whole
- 1/2 t. baking soda
- 1/2 t. sea salt
- 1 t. cinnamon
- 1/8 t. nutmeg, freshly grated
- 2 large, ripe bananas, mashed
- 2 T. oil (I used walnut because I thought it paired well with the banana)
- 1 T. maple syrup
- 8 drops liquid stevia (or another tablespoon of maple syrup)
- 1/2 c. + 1 T. potato water (see below for instructions on how to make it) (eliminate the extra tablespoon if you use maple syrup in place of stevia)

- 1 15 oz can of Organic Pumpkin or 2.5 cups of fresh baked (always get fresh when in season)
- 3 tbsp coconut cream or 1/2 can coconut milk
- 1 cup water (use 1/2 cup water if using canned coconut milk)
- 1 tsp gluten free vanilla extract
- 2-3 soy free eggs, beaten
- 1/2 tsp nutmeg
- 1 tsp cinnamon
- 1 tbsp sliced almonds (optional)
- 1/4 cup shredded coconut
- Real salt to taste
- Stevia or honey, to taste (optional)

Preheat oven to 375 degrees
- 3/4 c. sorghum flour
- 3/4 c. superfine brown rice flour
- 3/4 c. arrowroot starch
- 3/4 c. tapioca starch
- 1 Tbs. xanathan gum
- 4 1/2 tsp. rapid rise yeast
- 1 1/4 c. warm water (110-130 degrees)
- 2 Tbs. flax meal + 6 Tbs. warm water (Alternately use two eggs. If you use eggs, also add 1 Tbs. flax meal)
- 3 Tbs. olive oil
- 1 tsp. salt
- 1 tsp. Italian seasoning (I use the Italian seasoning when I know I'm going to cut up leftover bread up for croutons)
