Pie - Pecan Granola

Preheat the oven to 350. In one bowl, mix the dry ingredients
- 3 cups rolled oats
- 1 cup chopped raw pecans
- 1/3 cup maple syrup
- 1/4 cup applesauce
- 2 T milk (I used almond milk)
- 2 tsp ground vanilla bean(Vanilla extract would work too)
- 1/2 tsp salt
ice cream - Pineapple-Coconut Sorbet

Combine coconut milk, sugar and ginger in a small saucepan
- 1/2 cup “lite” coconut milk
- 1/2 cup sugar
- 3 1/4-inch-thick slices peeled fresh ginger, crushed
- 1 pineapple, (about 3 1/2 pounds), peeled, cored and cut into chunks
- 2 teaspoons lime juice
tortilla - gluten free flaxseed wrap (x2)

Mix the dry ingredients together in a bowl using a whisk
- 1/4 cup Bob’s Red Mill, All Purpose Flour or a 1/4 of 70% chickpea flour with 30% tapioca or potato starch
- 3 tbs milled flaxseeds
- 1/4 cup warm water
- 1 medium egg
- 1/2 tsp: cumin, ground coriander and tumeric
- Salt and pepper to taste

Approximate nutrition information: Per meatball: 78 calories, 6g fat,
- 1 lb ground turkey
- 1 egg
- 1/4 cup almond flour
- 1/2 tsp salt
- 1/4 tsp ground black pepper
- 1/2 tsp garlic powder
- 1/2 cup shredded whole milk mozzarella
- 2 Tbsp sun dried tomatoes, chopped
- 2 Tbsp fresh basil, chopped
- 2 Tbsp olive oil for frying
cookie - Vegan Coconut Oil Chocolate Chip Cookies

In a small mixing bowl, whisk together all dry ingredients and set aside
- 1/2 cup quinoa flour
- 1/2 cup brown rice flour
- 2 tablespoons arrowroot starch (I haven't tried these with tapioca or potato)
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon sea salt
- 1/2 cup coconut oil, softened
- 1 cup coconut sugar
- 1 flax egg (1 tablespoon flaxseed meal + 3 tablespoons water)
- 1 teaspoon vanilla extract
- 1/2 cup vegan chocolate chips
cake - Orange Almond Cake (Gluten Free)

Bring a pot of water to the boil, add the oranges, cover and simmer for one hour
- 3 large oranges
- 500 g white sugar
- 6 large eggs
- 500 g almond meal

Slice cabbage very thin and dice
- 1 head of cabbage (or 1/2 head green and 1/2 head purple cabbage), sliced very thin and then diced
- 1 cup thinly sliced carrots
- 3-4 celery stalks, thin sliced
- 1 small head of broccoli, cut into small pieces without stem
- 1 bunch green onions, sliced
- 3/4 cup almonds, sliced or slivered
- 1 cup craisins
- Dressing Ingredients
- 1/2 cup oil
- 1/4 cup red wine vinegar
- 2 Tbsp. sugar or honey
- 1 tsp. salt
- 1/2 tsp. garlic powder
- 1/4 tsp. onion powder
- 1/4 tsp. pepper
- 2 tsp. instant bouillon powder (MSG free)

- 300 g dates (or sub some raisins)
- 70 g oats
- 70 g cashews (or other nuts or mixture of choice)
- 20 g flax
- 70 g pumpkin seeds
- 1 tsp ground mixed spice
- 1 tsp ground cinnamon

- 1/2 cup (100 g) white sugar, divided 1/4 cup (50 g) and 1/4 cup (50 g)
- 1 1/2 cup (170 g) finely ground almond flour*
- 1 teaspoon baking powder (make sure your baking powder is fresh!)
