Quickbread - Caramel-Glazed Apple Bread

Moist apple bread and chopped pecans with a rich caramel glaze drizzle
- BREAD:
- 1 1/2 cups peeled baking apples, shredded (2 large)
- 1 cup brown sugar, packed
- 1/2 cup buttermilk
- 1/2 cup vegetable oil
- 4 eggs, lightly beaten
- 3 cups all purpose flour
- 1/2 cup pecans, chopped
- 2 teaspoons baking soda
- 2 teaspoons ground cinnamon
- 1 teaspoon salt
- 1 teaspoon ground nutmeg
- GLAZE:
- 2 tablespoons butter or margarine
- 1/4 cup brown sugar, packed
- 1 tablespoon milk
- 1/2 cup powdered sugar, sifted
Pudding - Pumpkin Chia Pudding

- 1 cup pumpkin puree
- 3/4 cup vanilla flavored coconut milk
- 4 tablespoons chia seeds
- 1 tablespoon pure maple syrup
- 3/4 teaspoon cinnamon
- 1/4 teaspoon ground ginger
- 1/8 teaspoon nutmeg

Combine dry ingredients in a bowl
- 1 cup rolled oats
- 1 cup Rice Chex (or other cereal)
- 2 tablespoons chia seeds
- 2 tablespoons ground flaxseed
- 1/4 cup pumpkin seeds
- 1/4 cup chopped almonds (or your favorite nut)
- 1/2 cup nut butter
- 1/3 cup honey
- 2 tablespoons chocolate chips, optional

- 1/4 cup honey
- 1 teaspoon apple cider vinegar
- 1 teaspoon pure vanilla extract
- 1/2 cup coconut flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon sea salt

- 1/2 cup honey
- 1 1/2 tablespoons almond butter (smooth & with sea salt only)
- 3 teaspoons unsalted grassfed butter*

Preheat oven to 350 degrees Fahrenheit
- 3 large extra ripe bananas
- 3 eggs
- 1/4 cup maple syrup
- 1 tbsp. honey
- 1 tbsp. vanilla extract
- 1/4 cup coconut oil
- 1 tsp. cinnamon
- 1 1/2 cups almond flour
- 1 cup gluten-free rolled oats flour
- 1/2 tsp. sea salt
- 1 tsp. baking soda
- 3/4 cup chopped walnuts
mousse - low carb peanut butter mousse

Whip your whipping cream to stiff peaks in a medium bowl with a hand mixer and set aside
- 1/2 C heavy whipping cream (about one cup whipped)
- 4 oz. cream cheese (or Neufchatel cheese)
- 2 T natural peanut butter (no sugar added)
- 1/2 tsp. vanilla extract
- 7-10 drops stevia extract (equiv. 1/3 cup, or to taste)
pie crust - quick and easy gluten free

Combine all ingredients in a food processor and blend
- 2 tbsp cocoa powder (or cacao powder)
- 1/2 cup raw cashews (or almonds, walnuts, pecans, or macadamia nuts)
- 1/2 cup shredded coconut (unsweetened) (See nutrition link below, for substitution notes.)
- 1/8 tsp salt
- scant 1/2 cup pitted dates (8 small dates) (Readers have said that raisins work as well.)

Preheat oven to 350 degrees F
- 1 can black beans, rinsed and drained (15 1/2 oz)
- 2 eggs
- 3 tbsp vegetable oil
- 1/2 cup granulated sugar
- 1/4 cup and 1 tbsp cocoa powder
- 1 tsp baking powder
- 1/8 tsp salt
- 1 tsp vanilla
- Semi-sweet chocolate chips for topping (optional)

ombine the yeast, sugar and warmed milk in a small bowl and whisk to dissolve the sugar
- 2 tablespoons dry active yeast
- 2 teaspoons sugar
- 2 cups rice milk (or milk) – warm but not hot
- 1 1/2 cups superfine or Asian White Rice Flour
- 1/2 cup superfine or Asian Sweet Rice Flour (also called glutinous rice flour)
- 3/4 cup potato starch (not potato flour)
- 1/2 cup tapioca starch
- 3 teaspoons xanthan gum
- 1 1/2 teaspoons kosher or fine sea salt
- 1 tablespoon baking powder
- 3 large eggs – use divided
- 1/4 cup butter or non-dairy butter substitute (Earth Balance recommended) plus more for brushing the pans
- 1/4 cup honey
- 1 teaspoon apple cider vinegar
- in place of the various flours and starches you can use 3 1/4 cups of a good quality, all-purpose gluten free flour blend.

Preheat oven to 500 degrees F
- 1 small to medium sized head of cauliflower - should yield 2 to 3 cups once processed
- 1/4 cup shredded Parmesan cheese
- 1/4 cup mozzarella cheese
- 1 egg
- 1/4 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/2 teaspoon basil or rosemary, minced (or dry)
- 1/2 teaspoon oregano, minced (or dry)
- 1 cup marinara sauce
- 1-2 cups mozzarella cheese
