- Ingredients for the dough:
- 3 sticks plus 1 tablespoon unsalted butter, softened
- 2 eggs yolks
- 3/4 cup sugar

- Ingredients for the filling:
- 2 1/4 pounds fresh ricotta
- 1 Cup sugar
- 5 eggs
- 2 teaspoons vanilla extract
- 2 cups heavy cream
- Confectioner’s sugar for dusting

- 2 cups white rice flour
- 1/3 cup tapioca flour or cornstarch
- 1 teaspoon salt
- 2 1/2 teaspoons GF baking powder
