Sweet Potato Breakfast Stacks

1 - Heat 1 tbsp. olive oil in a large skillet over medium heat
- 2 tbsp extra virgin olive oil - divided
- 1 medium sized sweet potato - peel and cut into 1/2" thick rounds
- 1/4 tsp. table salt - divided
- 1/4 tsp. black pepper - divided
- 2 tsp. white vinegar
- 4 large eggs
- 1 minced garlic clove
- 4 oz. baby spinach
- 4 low fat / low sodium bacon - cooked crisp and broken in half
- Tabasco sauce - optional
Cauliflower "Buns"

Preheat oven at 425 degrees Grate cauliflower and cook in microwave for 8 minutes
- 2 cups riced cauliflower (rung dry of all excess water)
- 1/4 cup parmesean cheese
- 1 tsp. corn starch
- salt & pepper to taste
Banana & Strawberry Frozen Yogurt

Place frozen bananas, yogurt, honey, lemon juice and cinnamon in a food processor
- 4 large ripe bananas, sliced and frozen (freeze in a single layer so that they wont stick or clump)
- 3/4 cup plain Greek yogurt
- 1/2 cup honey
- 1 tbsp fresh lemon juice
- 1/2 tsp ground cinnamon
- Toasted almond slices
- Sliced fresh strawberries
Mudslide Mousse Shots

- 1 tbsp hot water
- 1 package instant fat free sugar free chocolate pudding and pie filling
- 1 1/2 cups fat free milk
- 1 1/2 cups fat free whipped topping, divided

Chocolate Banana Bread

- 1 cup all purpose flour
- 1/2 cup Dutch process cocoa
- 1 tsp. baking soda
- 1/2 tsp. sea salt
- 3 large ripe bananas (1 1/2 cups mashed)
- 1/4 cup unsalted butter, melted and slightly cooled
- 1/4 cup canola, vegetable or melted coconut oil
- 3/4 cup packed light brown sugar
- 1 large egg, at room temperature
- 1 tsp. pure vanilla extract
- 1 cup semisweet chocolate chips, divided
Coconut Shrmip

- 2 sprays cooking spray
- 2 large egg whites
- 3/4 cups flour
- 6 oz beer - approx 2/3 cup
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 2 cups sweetened coconut flakes
- 24 large cleaned shrimp (leave tails on)
- to put crunch in this dish, reduce coconut to 1 cup and add 1 cup panko.
Unstuffed Cabbage

Brown ground meat and drain excess fat
- 1 1/2 lbs ground meat (turkey or beef)
- 2 cans crushed tomatoes
- Cabbage (Nappa my preference) - sliced / chopped
- Salt - to taste
- Pepper - to taste
- Garlic - crushed
- Onions - thinly sliced (optional)
