OVERNIGHT COOKIES

Another recipe that Mother made when we were children
- Combine together:
- 2 c. brown sugar,
- 1 c. softened butter
- 2 eggs
- Then add:
- 1 tsp. soda,
- 2 tsp. baking powder
- 3-4 c. flour
Chicken and Strawberry Salad

Serves 6
- 1/2 cup poppy seed dressing
- 1/4 cup mayonnaise
- 1 1/2 pounds chopped cooked chicken (about 3 1/2 cups)
- 2 celery ribs, sliced
- 1 pint fresh strawberries, halved
- 1 avocado, cut into 1-inch cubes
- 1/2 small red onion, thinly sliced
- 1/2 cup slivered almonds, toasted
- 1 (10-ounce) package mixed salad greens
- Garnishes: avocado slices, whole strawberries
PUREED PEANUT BUTTER AND VEGETABLE SOUP

- 1 large onion, diced (1 c.)
- 1 large clove garlic, minced (1 tsp.)
- 1 Tbs. vegetable oil (peanut, if available)
- 1 stalk celery, diced
- 2 carrots, diced
- 2 cups peeled and diced potatoes
- 2 leeks (white part only), washed well and diced (optional)
- 4 cups chicken or vegetable broth
- 1/4 tsp. cayenne
- 1/4 tsp. freshly ground black pepper
- 1/4 tsp. salt, if desired, to taste
- 1/2 c. smooth peanut butter
PASTA SALAD

This is a variation of a recipe from Peg’s friend (and former babysitter for Kayla and Steven), Grayce Yoder
- Cook:
- 1 (16-oz.) box tri-color pasta spirals
- Drain, rinse and cool. Add to pasta:
- Cherry tomatoes
- Diced Monterey Jack cheese
- Diced cucumbers
- Chopped red peppers
- Parmesan cheese
REFRIGERATOR LAYER SALAD

- In large bowl place the following:
- 2 inches of lettuce, torn in small bite-size pieces
- 1 10-oz. pkg. frozen peas (uncooked)
- 6 strips bacon, fried and crumbled
- 1/2 c. chopped onion
- 1 inch cauliflower
- Sprinkle 1/2 package of Good Seasons Garlic dry salad dressing mix over the top.
- Spread 1 pint of mayonnaise over the top.
- Sprinkle with 1/2 c. Parmesan cheese.
CHICKEN MANICOTTI

- 8 manicotti shells, cooked
- 1 (10 3/4-oz.) can creamy chicken soup
- 1/2 c. sour cream
- 2 c. chopped cooked chicken
- 1/4 c. chopped onion
- 1 (4-oz.) can sliced mushrooms, drained
- 2 Tbs. margarine, melted
- 1/4 c. warm water
- 1/2 tsp. Chicken-flavored bouillon granules
- 1 c. (4-oz.) shredded Cheddar cheese
CHOCOLATE TURTLE MARTINI

- 2 oz. vanilla vodka
- 2 oz. white crème de cacao
- 2 oz. praline Liqueur
WHITE CHOCOLATE BERRY CHEESECAKE

- 1 1/2 cups crushed chocolate wafers (about 25)
- 3 Tbs. butter, melted
- 1 12-oz. pkg. frozen lightly sweetened red raspberries, thawed, pureed, and strained
- 1 Tbs. raspberry liqueur
- 1 tsp. cornstarch
- 1 6-oz. pkg. white chocolate baking squares, chopped
- 3 8-oz. pkg. cream cheese, softened
- 1/2 c. sugar
- 3 eggs
FROZEN STRAWBERRY MARGARITA PIE

(from Best of the Best from Illinois cookbook)
- Crust:
- 1 1/3 c. graham cracker crumbs
- 1/4 c. sugar
- 1/4 c. butter, melted
- Combine crumbs, sugar and butter in a small bowl; press into bottom and sides of a 9-inch pie plate.
- Filling:
- 1 (14 oz.) can sweetened condensed milk
- 1/4 c. freshly squeezed lime juice
- 3 Tbs. tequila
- 3 Tbs. Triple Sec
- 1/2 c. frozen strawberries with syrup, thawed
- 2 c. heavy cream, whipped
BROILED TILAPIA PARMESAN

- 3 Tbs. lite mayonnaise
- 2 Tbs. fresh lemon juice
- 1/4 tsp. dried basil
- 1/4 tsp. ground black pepper
- 1/8 tsp. onion powder
- 1/8 tsp. celery salt
- 2 lbs. tilapia fillets
