  • 1/4 cup mayonnaise
  • 1 1/2 pounds chopped cooked chicken (about 3 1/2 cups)
  • 2 celery ribs, sliced
  • 1 pint fresh strawberries, halved
  • 1 avocado, cut into 1-inch cubes
  • 1/2 small red onion, thinly sliced
  • 1/2 cup slivered almonds, toasted
  • 1 (10-ounce) package mixed salad greens
  • Garnishes: avocado slices, whole strawberries

  • 1 large onion, diced (1 c.)
  • 1 large clove garlic, minced (1 tsp.)
  • 1 Tbs. vegetable oil (peanut, if available)
  • 1 stalk celery, diced
  • 2 carrots, diced
  • 2 cups peeled and diced potatoes
  • 2 leeks (white part only), washed well and diced (optional)
  • 4 cups chicken or vegetable broth
  • 1/4 tsp. cayenne
  • 1/4 tsp. freshly ground black pepper
  • 1/4 tsp. salt, if desired, to taste
  • 1/2 c. smooth peanut butter

  • Cook:
  • 1 (16-oz.) box tri-color pasta spirals
  • Drain, rinse and cool. Add to pasta:
  • Cherry tomatoes
  • Diced Monterey Jack cheese
  • Diced cucumbers
  • Chopped red peppers
  • Parmesan cheese

REFRIGERATOR LAYER SALAD

  • In large bowl place the following:
  • 2 inches of lettuce, torn in small bite-size pieces
  • 1 10-oz. pkg. frozen peas (uncooked)
  • 6 strips bacon, fried and crumbled
  • 1/2 c. chopped onion
  • 1 inch cauliflower
  • Sprinkle 1/2 package of Good Seasons Garlic dry salad dressing mix over the top.
  • Spread 1 pint of mayonnaise over the top.
  • Sprinkle with 1/2 c. Parmesan cheese.

  • Crust:
  • 1 1/3 c. graham cracker crumbs
  • 1/4 c. sugar
  • 1/4 c. butter, melted
  • Combine crumbs, sugar and butter in a small bowl; press into bottom and sides of a 9-inch pie plate.
  • Filling:
  • 1 (14 oz.) can sweetened condensed milk
  • 1/4 c. freshly squeezed lime juice
  • 3 Tbs. tequila
  • 3 Tbs. Triple Sec
  • 1/2 c. frozen strawberries with syrup, thawed
  • 2 c. heavy cream, whipped
