STUFFED PEPPERS

Cook and stir beef, onion and garlic over medium heat until beef is brown; drain
- 1 lb. ground beef
- 1/2 c. chopped onion
- 1 small clove garlic, chopped
- 1 can (8oz.) tomato sauce
- 1/4 c. catsup
- 1/2 tsp. salt
- 1/4 tsp. pepper
BAKED PORK CHOPS

- Saltine crackers, crushed
- Seasoned salt
- Parmesan cheese
- Basil
- Oregano
- Garlic powder
- Pepper
- 1 large egg
- 6 pork chops
Marinated Shrimp-and-Artichokes

- 1/4 cup white balsamic vinegar
- 2 tablespoons finely chopped fresh parsley
- 2 tablespoons finely chopped green onion
- 3 tablespoons olive oil
- 1 (0.75-oz.) envelope garlic-and-herb dressing mix
- 1 pound peeled and deveined, large cooked shrimp (2 1/30 count)
- 1 (14-oz.) can artichoke hearts, drained and cut in half
- 1 (6-oz.) can large black olives, drained
- 1 cup halved grape tomatoes
- 1 (4-oz.) package feta cheese, cut into 1/2-inch cubes
- Small fresh basil leaves
MINTED CHOCOLATE CHIP BROWNIES

- 1/2 c. butter or margarine
- 2 Tbs. water
- 1 c. semisweet chocolate chips
- 1 1/2 tsp. vanilla
- 2 large eggs
- 1 1/4 c. all-purpose flour
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1 c. mint chocolate chips
- Powdered sugar for garnish

- 4 tablespoons Dijon mustard
- 1 tablespoon oil
- 2 tablespoons butter
- 2 shallots, minced
- 1 cup Marsala wine
- 1 tablespoon Dijon mustard
- 1 cup heavy cream

- Cream together:
- 1/2 c. sugar
- 1/2 tsp. salt
- 1/4 c. margarine
- Mix in:
- 1/2 c. milk
- 1 egg
- Sift and add:
- 1 1/2 c. flour
- 2 tsp. baking powder
KEY LIME WHITE CHOCOLATE CHIPPERS

Cream butter, sugar, egg, egg yolk in a large bowl; blend in flour, baking powder, salt, lime juice and zest
- 1/2 cup butter, softened
- 1 cup sugar
- 1 egg
- 1 egg yolk
- 1 1/2 cups flour
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1/4 cup lime juice
- 1 1/2 tsp. lime zest
- 3/4 cup white chocolate chips
BASIC CHEESE FONDUE

Dredge the cheese slightly with the flour
- 1 lb. Swiss cheese of 1/2 lb. Emmentaler and the other half Gruyere, shredded or diced; or the equivalent in slices, finely cut.
- 2 Tbs. flour or 1 1/2 Tbs. cornstarch
- 1 garlic clove
- 2 c. dry white wine such as Neuchatel or any light dry wine of the Rhine or Chalis type
- 1 Tbs. lemon juice
- 3 Tbs. kirsch or brandy
- Nutmeg, pepper or paprika, to taste
- 2 loaves Italian or French bread cut in cubes with crust on each side.
CHOCOLATE CHERRY CAKE

- Frosting:
- 1 pkg. fudge cake mix
- 21 oz. can cherry filling
- 1 tsp. almond extract
- 2 eggs, beaten
- 1 c. sugar
- 5 Tbs. butter
- 1/3 c. milk
- 6 oz. pkg. (1 c.) semi-sweet chocolate bits
