Dredge the cheese slightly with the flour

  • 1 lb. Swiss cheese of 1/2 lb. Emmentaler and the other half Gruyere, shredded or diced; or the equivalent in slices, finely cut.
  • 2 Tbs. flour or 1 1/2 Tbs. cornstarch

  • 2 c. dry white wine such as Neuchatel or any light dry wine of the Rhine or Chalis type
