- 1/2 envelope dry onion soup
- 12 c. catsup
- 1/4 c. salad oil
- 1/2 c. water
- 2 Tbs. sugar
- 1/4 c. vinegar
- 1 Tbs. mustard
- Dash hot pepper sauce
BLACK BEAN LASAGNA

- 1 large onion, chopped
- 1 medium green pepper, chopped
- 4-6 cloves garlic, minced
- 2 Tbs. vegetable oil
- 1 can (28 oz.) crushed tomatoes
- 1 1/2 tsp. salt
- 1 1/2 tsp. chili powder
- 1 tsp. cumin
- 1/8 tsp. cayenne pepper
- 1 can (15 oz.) black beans, rinsed and drained
- 1 cup canned pinto beans, rinsed and drained
- 1 carton (15 oz.) ricotta cheese
- 1 egg white, beaten
- 2 Tbs. minced parsley
- 1 Tbs. chopped, seeded jalapeno pepper
- 2 cups (8 oz.) shredded cheddar cheese
- 4 flour tortillas (7 inches), halved
ETOUFFEE

- 2 Tbs. margarine
- 1 tsp. chopped garlic
- 3/4 c. diced onion
- 1/4 c. diced celery
- 1/2 tsp. salt
- 1/2 tsp. cayenne pepper
- 1/2 tsp. paprika
- 1/4 tsp. dry mustard
- 1/2 tsp. Worcestershire sauce
- 12 oz. condensed cream of mushroom soup
- 1/2 c. condensed cream of celery soup
- 1 c. water
- 1/2 lb. cubed chicken breast OR 1/2 lb. uncooked shrimp, cleaned
- 3 Tbs. sliced green onions
- 1 Tbs. chopped parsley
- 3 c. cooked rice
SEVEN MINUTE FROSTING

Combine egg whites, sugar, salt, cream of tartar and water; place in the top of a double boiler over boiling water
