This is SOOO yummy! serve with corn chips or other "scoop" chip. Got this from a friend in our bunco group. Makes a great appetizer :)

Ingredients

  • 2- 11 oz. cans of Green Giant Mexicorn (or southwest canned corn blend), drained
  • 2 cups pepperjack cheese, shredded
  • 3/4 cup grated Parmesan
  • 3/4 cup mayonnaise
  • Chopped jalapeno pepper to taste (with some sliced for the topping if you
  • like)

Blend all ingredients together and bake uncovered in a shallow dish at 350 for about 30 minutes.
