Ingredients

  • 1 large russet potato scrubbed clean
  • 1/3 sweet yellow onion, chopped fine
  • 3/4 cups sharp cheddar or mix of sharp cheeses, shredded
  • 2 tablespoons flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 beaten egg
  • Olive oil or butter, for frying
  • Fried egg (optional)

Step 1

Put onion in Cuisinart with sharp blade, chop until fine. Remove sharp blade and replace with grating blade and grate potato with skin on. Dump contents of Cuisinart on clean towel, roll up and wring to remove as much liquid as possible. Dump into large bowl.

Shred cheddar cheese in same Cuisinart and add to potatoes. Dust with flour, salt and pepper. Toss potatoes, cheese, flour and spices until well distributed. Beat 1 egg and pour over. Mix well into potato mix.

On a medium high griddle, pour 1 tablespoon of olive oil and 1/2 tablespoon of butter, mix together, when melted, add potatoes in pancake size portions. Press flat. Cook until golden and crispy on first side (a few minutes). When crispy, flip pancakes and cook on second side until golden and crispy. Serve with Fried Egg (optional).
