Shrimp Scampi

- Melt a stick of butter in the pan. Slice one lemon and layer it on top of the butter. Put down fresh shrimp, then sprinkle one pack of dried Italian seasoning. Put in the oven and bake at 350 for 15 min. Best Shrimp you will EVER taste:)
Crockpot Italian Sausage Soup

Combine all meatball ingredients
- Sausage Meatballs
- 1 pound mild Italian sausage, casings removed
- 1/2 cup dried bread crumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup milk
- 1 egg
- 1/2 teaspoon dried basil
- 1/2 teaspoon black pepper
- 1/4 teaspoon garlic salt
- Soup
- 4 cups hot chicken broth
- 1 tablespoon tomato paste
- 1 clove garlic, minced
- 1/4 teaspoon red pepper flakes
- 1/2 cup mini pasta shells*
- bag (10 ounces) baby spinach leaves
- Grated Parmesan cheese
- salt to taste
Lemon Coconut Macaroons

Preheat the oven to 300 degree F
- 1 large egg white
- 1/8 teaspoon salt
- 3/4 cup sweetened condensed milk
- 1 tablespoon lemon zest
- 1/2 teaspoon lemon extract
- 1/2 teaspoon vanilla extract
- 1 (14-ounce) bag shredded sweetened coconut, finely chopped
Italian Beef and Pepperoni Soup

Preparation Instructions In a large Dutch oven, brown ground beef and cook pepperoni slices
- 1 pound Lean Ground Beef
- 1 cup Turkey Pepperoni, Sliced
- 1 teaspoon Olive Oil
- 2 cloves Garlic, Chopped
- 1 cup Mushrooms, Sliced
- 1 whole Bell Pepper, Seeded And Chopped
- 4 cups Chicken Broth
- 1 can (28 Oz. Size) Crushed Tomatoes
- 2 Tablespoons Tomato Paste
- 1 teaspoon Dried Basil
- 1 teaspoon Dried Oregeno
- 1 teaspoon Black Pepper
Clementine Muffins

In a bowl, combine the first five ingredients
- 2 cups all-purpose flour
- 1/2 cup sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup (8 ounces) vanilla yogurt
- 1 egg, lightly beaten
- 1/4 cup butter, melted
- 2 tablespoons milk
- 1 cup diced peeled clementines
- 1 tablespoon grated clementine peel
Blazy's Pepperoni Studded Lasagna

Preheat oven to 375 degrees F
- 2 pounds lasagna sheets
- 2 cups hand cut 1/8-inch slices pepperoni
- 4 cups tomato sauce, recipe follows
- 1 pound ricotta
- 16 ounces shredded mozzarella
- 2 pounds bulk Italian sausage, cooked
- 3/4 cup grated Parmesan
- 3 ounces extra-virgin olive oil
- 1 yellow onion, minced
- 5 medium-sized garlic cloves, crushed
- 6 cups skinned and diced Roma tomatoes
- 2 tablespoons thinly sliced fresh basil leaves
- 1 tablespoon minced fresh oregano leaves
- Salt
- Freshly ground black pepper
Coconut Scones with Coconut Glaze

Make the scones: Preheat the oven to 400 degrees
- 4 1/4 cups all-purpose flour
- 2 tablespoons baking powder
- 1 teaspoon salt
- 1/4 cup granulated sugar, plus more for sprinkling
- 2 cups shredded coconut
- 3 sticks cold unsalted butter, cubed
- 1 cup unsweetened coconut milk
- 4 large eggs, lightly beaten
- 1 teaspoon coconut extract
- 2 cups pecans, finely chopped
- 2 tablespoons unsweetened coconut milk
- 1/4 teaspoon coconut extract
- 1/4 teaspoon vanilla extract
- 1/2 to 1 cup confectioners' sugar
Korean BBQ

Combine wine or pear juice, soy sauce, brown sugar, garlic, chili sauce, and sesame oil in a large bowl
- 1 1/2 lb. sirloin steak, cut against the grain into thin (about 1/4″) slices
- 1/2 c. rice wine or pear juice (1 4 oz. bottle of pear juice from the baby food aisle is perfect and cheap)
- 1/2 c. low-sodium soy sauce (regular soy sauce makes it taste vaguely like beef jerky)
- 2 Tbsp. brown sugar
- 2 Tbsp. minced garlic
- 1 tsp. Sriracha chili sauce
- 1 1/2 tsp. sesame oil
Parmesan Zucchini Strips

For Zucchini: Preheat oven to 450 degrees
- Parmesan Zucchini Strips
- 1 Large Zucchini, quartered then cut into strips
- 1/3 cup Seasoned Breadcrumbs
- 1/4 cup Parmesan Cheese
- 1/2 Tablespoon Kosher Salt
- 1/2 Tablespoon Fresh Cracked Black Pepper
- 2 Eggs, beaten
- Creamy Parmesan Dipping Sauce
- 1/2 cup light sour cream
- 1/4 cup grated Parmesan cheese
- 2 Tablespoons Dijon mustard
- 1/4 Teaspoon Kosher salt
- 1 Teaspoon fresh lemon juice
Nutella Pizza

Heat oven to 450 degrees Line a heavy large baking sheet with parchment paper
- 1 lb Pizza Dough – you can make your own but you can cut the prep time in half – buy fresh Pizza Dough from the refrigerator section of your local supermarket or pizzeria.
- Chocolate Hazelnut spread, I prefer the Nutella brand.
- Fresh Fruit of choice – I generally use Banana’s, Strawberries, Raspberries, Blueberries
- Fresh Mint (optional)
- Confectioner’s Sugar
- Raspberry Sauce (optional)
