Pineapple Orange Colada

Place all ingredients in blender
- 1 1/2 cups fresh pineapple chunks or 1 can (20 ounces) pineapple chunks in juice, drained
- 1/2 cup frozen piña colada concentrate or Pineapple juice
- 2 cups orange sherbet
Maple Walnut Vinaigrette Salad Dressing

Combine all ingredients except the oils in a food processor
- 1/2 cup pure maple syrup
- 1/2 cup walnuts
- 1/4 cup cider vinegar
- 1 teaspoon kosher salt
- 1/2 teaspoon ground white pepper
- 1 teaspoon ground dry mustard
- 1/8 teaspoon garlic powder
- 2 tablespoons olive oil
- 2 tablespoons canola oil
Mongolian Beef

Step 1: To make the sauce- in a sauce pan heat 2 teaspoons of oil
- 1 lb flank steak
- 1/4 cup cornstarch
- 2 teaspoons vegetable oil
- 1/2 teaspoon ginger (minced)
- 1 tablespoon garlic (minced)
- 1/2 cup soy sauce
- 1/2 cup water
- 1/2 cup brown sugar
- 2 tablespoons rice wine
- 1/2 teaspoon red pepper flakes
- 2 green onions (sliced)
- 1 medium onion (sliced)
- Oil (for frying)
White Chocolate Peppermint Popcorn

Slowly melt white chocolate or candy coating in the microwave or on stove-top with double boiler
- 16 oz. white chocolate (can use white chocolate baking morsels) or vanilla candy coating.
- 1 cup finely crushed (like sand) peppermints (about 10-12 candy canes or 40 mints) I crush my peppermints in my food processor. The mints will scratch the plastic.
- 4 quarts popped popcorn (about 1/2 cup corn kernels) I used this to pop my corn, so it had salt. If you are using air popped corn, throw in a pinch of salt when you sprinkle in the crushed peppermints.
Lemon-Pecan Sunburst Coffee Cake

1 Heat oven to 375°F. Grease 9 or 8-inch round cake pan
- 1 (1 lb. 1.3-oz.) can Pillsbury® Grands!® Refrigerated Flaky Biscuits
- 1/4 cup finely chopped pecans
- 1/4 cup sugar
- 2 teaspoons grated lemon peel
- 2 tablespoons butter or margarine, melted
- 1/2 cup powdered sugar
- 1 1/2 oz. cream cheese (from 3-oz. pkg.), softened
- 2 1/2 to 3 teaspoons lemon juice
Garlic Rice Pilaf

Preheat the oven to 375° F
- 2 tbsp. butter
- 3 cloves garlic, pressed
- 1 cup long-grain white rice
- 2 1/2 cups chicken broth, divided
- 1/2 tsp. salt
- 1/2 tsp. pepper
Chick Fuh Lay Sauce

In a small bowl, combine all the ingredients for the sauce, mix well, and set aside or pop in the fridge
- 1/2 cup mayo
- 2 tbsp. mustard (regular prepared yellow mustard)
- 1/2 tsp. garlic powder
- 1 tbsp. vinegar
- 2 tbsp. honey
- Salt and pepper, to taste
Elvis Presley Cake

1. Prepare cake according to instructions on package
- 1 (18.25 ounce) package white cake mix
- 1 (8 ounce) can crushed pineapple with juice
- 2 cups white sugar
- 1 (8 ounce) package cream cheese
- 1/2 cup butter, softened
- 4 cups confectioners' sugar
- 1 teaspoon vanilla extract
- 1 cup chopped pecans
Strawberry Poke Cake

In a large bowl, beat the cake mix, water, eggs and oil; beat on low speed for 30 seconds
- 1 package (18-1/4 ounces) white cake mix
- 1-1/4 cups water
- 2 eggs
- 1/4 cup canola oil
- 2 packages (10 ounces each) frozen sweetened sliced strawberries, thawed
- 2 packages (3 ounces each) strawberry gelatin
- 1 carton (12 ounces) frozen whipped topping, thawed, divided
- Fresh strawberries, optional
Chocolate Cranberry Spice Cookies

1. Sift the flour, cocoa powder, baking soda, spices, and salt in a medium bowl and set aside
- 1.5 cups all-purpose flour
- 6 tbsp Dutch-processed cocoa powder
- 1/4 tsp baking soda
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/8 tsp ground cardamom (original recipe used cloves)
- pinch of salt
- 1 stick unsalted butter, softened
- 1/2 cup mascarpone butter (from overbeaten mascarpone cheese)
- 3/4 packed light brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tbsp vanilla extract
- 3/4 cup dried cranberries
- 1.5 cups coarsely chopped walnuts, plus 20-30 whole walnuts for pressing into tops of cookies
