1 Heat oven to 300°F. Wrap outside of 10-inch springform pan with foil
- 1 1/4 cups chocolate cookie crumbs (from 15-oz box)
- 1/4 cup butter or margarine, melted
- 2 tablespoons instant espresso coffee granules
- 2 teaspoons vanilla
- 4 packages (8 oz each) cream cheese, softened
- 1 1/2 cups granulated sugar
- 4 eggs
- 1 teaspoon ground cinnamon
- 1/4 cup caramel topping
- 1 cup whipping cream
- 2 tablespoons powdered or granulated sugar

Peanut Butter Chocolate Chip Cake

Preheat oven to 325F. Grease three 9 x 1 1/2 inch pans
- 2 ounces unsalted butter
- 1 cup all purpose flour
- 1/4 tsp baking soda
- 1/4 tsp baking powder
- 1/4 tsp salt
- 1/2 cup tightly packed brown sugar
- 3 ounces creamy peanut butter
- 1 large egg
- 1 egg yolk
- 1/4 cup sour cream
- 1/4 cup hot water
- 1/2 tsp pure vanilla extract
- 1/2 cup semi sweet chocolate chips
Summer Corn Salad

In a small bowl, whisk the lime juice, salt, pepper sauce and 4 teaspoons oil; set aside

- 1/4 teaspoon salt

In a saucepan, saute onion and pimentos in butter for 5 to 7 minutes
- 1 small onion, diced
- 2 large pimentos, diced
- 3 tablespoons butter
- 3 tablespoons all-purpose flour
- 1 1/2 cups chicken stock
- 1 1/2 cups cream
- 3/4 cup grated sharp Cheddar
- 1/2 cup green onions
- Salt and black pepper
- Dash cayenne pepper, optional
- Suggested Serving: your favorite bread or croutons
Chicken and Mushroom Goulash with Gnocchi

Heat the extra-virgin olive oil and butter in a large, deep skillet over medium to medium-high heat
- 2 tablespoons extra-virgin olive oil, 2 turns of the pan
- 1 tablespoon butter
- 1 1/2 pounds ground chicken
- 1/2 pound white mushrooms, sliced
- 2 cloves garlic, chopped
- 1 medium onion, chopped
- 1 red bell pepper, seeded and chopped
- 2 teaspoons smoked paprika, 2/3 palm full
- Salt and pepper
- 1 cup chicken stock
- 1 cup tomato sauce
- 1/2 cup sour cream or reduced fat sour cream
- Handful chopped flat-leaf parsley
- 1 package fresh gnocchi, in refrigerated section of market, 12 to14 ounces
- 2 tablespoons chives
