Strawberry Lime Cream Cake

For Cake: Preheat the oven to 350 degrees F
- White Cake:
- 2 1/2 cups all-purpose flour
- 2 cups granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/8 teaspoon salt
- 1 1/3 cups buttermilk
- 1/2 cup butter, softened
- 1 teaspoon vanilla
- 4 egg whites
- Strawberry Syrup/Puree:
- 1 pint fresh strawberries, washed and hulled
- 4 tablespoons sugar
- 1 teaspoon lemon juice
- Lime Cream:
- Note: you can substitute 1 to 1 1/2 cups fresh strawberry jam for the strawberry puree
- 4 limes, for 1/2 cup fresh lime juice
- 1 (14-ounce) can sweetened condensed milk
- 2 cups heavy whipping cream
- Whipped Cream Frosting:
- 2 cups heavy whipping cream
- 1/2 cup powdered sugar
- 1 teaspoon vanilla
- 1 envelope (about 2 teaspoons) unflavored gelatin
- 4 tablespoons water
Cheesy Ham Chowder

In a large saucepan, bring water to a boil
- 3 cups water
- 3 cups cubed peeled potatoes
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 medium onion, chopped
- 2 teaspoons salt
- 1/2 teaspoon pepper
- 6 tablespoons butter
- 6 tablespoons all-purpose flour
- 4 cups whole milk
- 3 cups (12 ounces) shredded cheddar cheese
- 1 cup cubed fully cooked ham
Halibut Milanese

1. Combine egg, parmesan and parsley
- 4 each, 5 ounce Alaskan halibut filets
- 2 teaspoons olive oil
- 2 teaspoons flour
- 2 eggs
- 2 teaspoons grated parmesan
- 1 teaspoon chopped parsley
- 4 anchovy filets
- 4 lemon slices
Cucumber Salad

In a medium bowl, combine sour cream, lemon juice, and dill
- 1/2 cup reduced-fat sour cream
- 2 tablespoons fresh lemon juice (from 1 lemon)
- 2 tablespoons chopped fresh dill, plus more for garnish (optional)
- Coarse salt and ground pepper
- 4 to 6 Kirby cucumbers (about 1 pound), halved lengthwise and thinly sliced crosswise
