Chocolate Pots De Creme

Heat your oven to 350 degrees
- 2/3 cup milk chocolate chips
- 1 cup half & half
- 2 eggs
- 3 tablespoons sugar
- 2 tablespoons rum flavoring
- dash of salt
Roasted Pear and Chocolate Chunk Scones

Heat oven to 375°F. Peel and core pears
- 3 firmish pears (about 1 pound or 255 grams)
- 1 1/2 cups (190 grams) all-purpose flour
- 1/4 cup (50 grams) granulated sugar plus 1 1/2 tablespoons granulated or coarse for sprinkling
- 1 1/2 teaspoons (8 grams) baking powder
- 1/2 teaspoon (3 grams) table salt plus additional for egg wash
- 6 tablespoons (85 grams) cold unsalted butter, cut into small cubes
- 1/4 cup (60 ml) heavy cream
- 1/4 cup (3 ounces or 85 grams) semisweet or bittersweet chocolate, chopped (or chips)
- 2 large eggs, 1 for dough, 1 for glaze
Pineapple Pudding

This recipe is exactly like an original homemade banana pudding except you use canned pineapple instead
- 1 (15 ounce) can crushed pineapple, in it own juice (drained)
- 35 vanilla wafers (approximately 3/4 of one box)
- 3/4 cup sugar (divided, 1/2 cup & 1/4 cup)
- 1/3 cup flour
- 3 eggs, separated
- 2 cups whole milk or 2 cups 2% low-fat milk or 2 cups canned evaporated milk, is recommended for a richer,creamier flavor
- 1 pinch salt
- 1/2 teaspoon vanilla extract
Cran-Raspberry Pie Recipe

In a large bowl, combine the cranberries, raspberries and extract
- 2 cups chopped fresh or frozen cranberries
- 5 cups fresh or frozen unsweetened raspberries, thawed
- 1/2 teaspoon almond extract
- 1 to 1-1/4 cups sugar
- 1/4 cup quick-cooking tapioca
- 1/4 teaspoon salt
- Pastry for double-crust pie (9 inches)
Taco Pasta

Bring a large pot of water to boil
- 1 pound ground beef
- 8 ounce small dry pasta shapes
- 1 small onion, chopped (or 1 Tbsp minced onion flakes)
- 1 clove garlic, minced
- 1 cup salsa
- 1 packet taco seasoning
- 3 ounce cream cheese
- 1/2 cup sour cream
- Salt and pepper
- Shredded Cheese for topping
Guiness and Irish Cream Cupcakes

To make the cupcakes, preheat oven to 350 F
- For the Guinness chocolate cupcakes:
- 1 cup stout beer/ Guinness
- 2 sticks unsalted butter
- 3/4 cup unsweetened cocoa
- 2 cups flour
- 2 cups sugar
- 1 1/2 tsp. baking soda
- 3/4 tsp. salt
- 2 large eggs
- 2/3 cup sour cream
- For the Bailey's ganache filling:
- 8 oz. bittersweet chocolate, finely chopped
- 2/3 cup heavy cream
- 2 tbsn. butter, room temperature
- 2 tsp. Irish whiskey OR Bailey's Irish cream
- For the Bailey's buttercream frosting:
- 8 tbsn. unsalted butter, room temperature
- 3-4 cups powdered sugar, sifted
- 4 - 8 tbsn. Bailey's Irish cream
- (I also used some half&half to thin the frosting out w/o adding more alcohol)

- 1 1/4 cups milk
- 1/4 cup light corn syrup
- 2 tbsp butter
- 2 tsp coconut extract
- 1 1/3 cups sweetened desiccated coconut
