Crispy Smashed Potatoes

Preheat oven to 500 degrees
- 2 pounds small red potatoes (1 1/2 – 2″ diameter)
- 6 tablespoons extra virgin olive oil (more if needed)
- 1 teaspoon thyme leaves
- fresh ground salt and pepper to taste
BLT Pasta Salad

Cook the pasta in a large pot of salted boiling water as the label directs
- 12 ounce corkscrew shaped pasta
- 1/2 cup milk
- 12 ounces lean bacon
- 3 medium ripe tomatoes, cut into chunks
- 1 tablespoon chopped fresh thyme
- 1 clove garlic, minced
- Kosher salt and freshly ground pepper
- 1/2 cup mayo (i used 1/4 cup mayo and 1/4 cup greek yogurt)
- 1/4 cup sour cream
- 4 tablespoons chopped chives
- 5 heads Bibb lettuce, quartered, or 5 cups chopped romaine hearts

Potato Sausage Casserole Recipe

In a large skillet, cook sausage over medium heat until no longer pink; drain and set aside
- 1 pound bulk pork sausage
- 1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
- 3/4 cup milk
- 1/2 cup chopped onion
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 3 cups sliced peeled potatoes
- 2 cups (8 ounces) shredded cheddar cheese
- Minced fresh parsley, optional
Homemade Little Debbie Oatmeal Cream Pies

Preheat oven to 375F degrees
- 1 and 1/4 cups unsalted butter (2.5 sticks), softened to room temperature
- 1 cup dark brown sugar
- 1/2 cup granulated sugar
- 1 large egg
- 2 teaspoons vanilla extract
- 1 Tablespoon dark molasses
- 1 and 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- 3 cups uncooked quick-cooking oats (NOT whole-rolled oats)
- 3/4 cup (1.5 sticks) unsalted butter, softened to room temperature
- 3 cups powdered sugar
- 3 Tablespoons heavy cream (using anything with less fat will result in a much less creamy consistency)
- 1 and 1/2 teaspoons vanilla extract
- pinch of salt, as needed

This peach salsa recipe has the perfect blend of sweet and spicy
- 1 1/2 cups ripe peaches, diced, about 4 to 6, depending on size
- 1 cup tomato, diced, about 2 medium
- 1 tablespoon jalapeño, finely minced, about 1/2
- 1/4 cup yellow pepper, diced small, substitute red or green pepper if you'd like
- 1/4 cup red onion, finely diced
- 1 tablespoon cilantro, chopped
- Juice 1 lime
- 1/4 teaspoon ancho chili powder, or other chili powder
- 1 tablespoon brown sugar, packed
- Salt and pepper, to taste
