Lemon Meringue Cake Recipe

In a large bowl, combine the cake mix, eggs, water and oil
- FILLING:
- 1 package lemon or yellow cake mix (regular size)
- 1 cup water
- 3 eggs
- 1/3 cup canola oil
- 1 cup sugar
- 3 tablespoons cornstarch
- 1/4 teaspoon salt
- 1/2 cup water
- 1/4 cup lemon juice
- 4 egg yolks, lightly beaten
- 4 teaspoons butter
- 1 teaspoon grated lemon peel
- MERINGUE:
- 4 egg whites
- 1/4 teaspoon cream of tartar
- 3/4 cup sugar
Italian Sausage Tortellini Soup

Place the sausage in a large pot over medium high heat and saute for 10 minutes, or until well browned
- 1 (3.5 ounce) link sweet Italian sausage, casings removed
- 1 cup chopped onions
- 2 cloves garlic, minced
- 5 cups beef stock
- 1/3 cup water
- 1/2 cup red wine
- 4 tomatoes - peeled, seeded and chopped
- 1 cup chopped carrots
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried oregano
- 1 cup tomato sauce
- 1 zucchini, chopped
- 8 ounces cheese tortellini
- 1 green bell pepper, chopped
- 1 tablespoon chopped fresh parsley
- 2 tablespoons grated Parmesan cheese for topping
Pineapple Mango Rum Cocktail

Puree mangoes, rum, and 1/2 cup water in a blender
- 2 1/2 small ripe mangoes, peeled and cubed (about 2 cups), plus 1/2 mango cut into slices with skin, for garnish
- 4 ounces best-quality golden rum
- 4 cups fresh pineapple juice (from a 4 1/2-pound pineapple)
- Fresh tropical fruit, such as dragon fruit and star fruit, for garnish
Baked Bacon French Toast

- 1 carton of Egg Beaters, or 7 whole eggs (beaten)
- French Bread*
- 6 slices of bacon
- 1 Tsp Vanilla
- 2 TB Cinnamon
- Maple Syrup

Crockpot Chicken Adobo Recipe

Place the onions, garlic, ginger, and bay leaf in an even layer in the slow cooker
- 4 medium yellow onions, halved and thinly sliced
- 4 medium garlic cloves, smashed and peeled
- 1 (5-inch) piece fresh ginger, cut into 1-inch pieces
- 1 bay leaf
- 3 pounds bone-in, skin-on chicken thighs
- 3/4 cup soy sauce
- 1/4 cup rice vinegar
- 1 tablespoon granulated sugar
- 1/2 teaspoon freshly ground black pepper
Potato Dumpling Soup

For dumplings: In a medium mixing bowl, stir together the flour, baking powder and salt
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 egg, lightly beaten
- 1/2 cup milk
- 2 tablespoons cooking oil
- 2 14 - ounce can reduced-sodium chicken broth or 3-1/2 cups chicken stock
- 1 1.8 - ounce white sauce mix
- 4 medium potatoes, chopped (4 cups)
- 1 large onion, chopped (1 cup)
- 1 cup diced cooked ham or Canadian-style bacon
- 1 12 - ounce can evaporated milk
- 1/2 teaspoon ground white or black pepper
- 1/4 cup snipped fresh parsley
Red Potato and Green Bean Saute

- salt for water
- 1 lb baby red potatoes, halved
- 1 lb fresh green beans, trimmed
- 1 1/2 teaspoon extra virgin olive oil
- 1 clove garlic, minced
- freshly ground black pepper to taste
- 3 tablespoon chopped fresh basil

Cranberry Margarita
