Rum Balls

Preheat oven to 350°F. Coat a 12 by 17-inch rimmed baking sheet with cooking spray
- 3/4 cup (1-1/2 sticks) unsalted butter, cut into pieces
- 6 ounces semisweet chocolate, finely chopped
- 3 large eggs
- 1/2 cup packed light brown sugar
- 1 teaspoon pure vanilla extract
- 1/2 teaspoon coarse salt
- 3/4 cup all-purpose flour
- 1/4 cup plus 2 tablespoons dark rum
- Coarse sanding sugar, for rolling
- Vegetable oil cooking spray
Pretzel Bites

Pretzel Bites: Take a thawed roll
- PRETZEL BITES
- Texas size Rhodes Frozen roll dough
- as many as you like - each roll makes four bites
- coarse salt, parmesan, garlic, cinnamon & sugar
- Vanilla glaze (optional)
- VANILLA GLAZE
- 1 cup powdered sugar
- 2 tablespoons milk
- 1 tablespoon melted butter
- 1 tsp. vanilla extract
- CHEDDAR DIP
- 1 Tablespoon butter
- 1 Tablespoon all purpose flour
- 1 cup milk
- 1 1/2 to 2 cups of grated Cheddar Cheese
Golden Peach Muffins

In a large bowl, combine the dry ingredients
- 1-1/2 cups all-purpose flour
- 1 cup sugar
- 3/4 teaspoon salt
- 1/2 teaspoon baking soda
- 1/8 teaspoon ground cinnamon
- 2 eggs
- 1/2 cup canola oil
- 1/2 teaspoon vanilla extract
- 1 can (15-1/4 ounces) sliced peaches, drained and finely chopped
Crockpot Chicken Caesar Sandwiches

1. Place chicken in a 3-4 quart slow cooker with 1-2 cups of water, cover and cook on low heat for 4-6 hours
- 2 pounds boneless skinless chicken thighs
- 1/2 to 1 cup of your favorite Caesar dressing (I like Cardini's and Brianna's Asiago Caesar)
- 1/2 cup shredded Parmesan cheese
- 1/4 cup fresh chopped parsley (if you don't have fresh use around 2 teaspoons of dried parsley)
- 1/2 teaspoon ground pepper
- 2 cups shredded romaine lettuce
- 12 slider buns or 4-6 regular sized hamburger buns
Nacho Pie

In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain
- 1 pound ground beef
- 1/2 cup chopped onion
- 1 can (8 ounces) tomato sauce
- 2 tablespoons taco seasoning
- 1 tube (8 ounces) refrigerated crescent rolls
- 1-1/2 cups crushed nacho tortilla chips, divided
- 1 cup (8 ounces) sour cream
- 1 cup (4 ounces) shredded Mexican cheese blend
Zinfandel Strawberry Trifle

In a large saucepan, combine wine and 1/3 cup sugar
- 1-1/2 cups Zinfandel wine or grape juice
- 1/2 cup sugar, divided
- 1 quart fresh strawberries, sliced
- 1 teaspoon vanilla extract
- 2 loaves (10-3/4 ounces each) frozen pound cake, thawed
- 2 cups heavy whipping cream
- Additional fresh strawberries
Peanut Butter Rice Krispy Treat Cookies

In a medium bowl whisk together the flour, baking soda and salt
- 2 1/4 cups all purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup butter, at room temperature
- 1/2 cup peanut butter
- 1/2 cup sugar
- 3/4 cups brown sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 3.4 ounce pkg vanilla instant pudding mix
- 1 1/2 cups miniature marshmallows
- 1 cup mini semi sweet chocolate chips
- 2 cups Rice Krispy Cereal
Mango Cake

Heat oven to 350°F. Grease 9-inch round cake pan or 8-inch square pan; sprinkle with Bisquick mix
- 1 2/3 cups Original Bisquick® mix
- 1/2 cup granulated sugar
- 1/3 cup milk or water
- 2 tablespoons vegetable oil
- 1 teaspoon vanilla
- 1/2 teaspoon ground nutmeg
- 1 egg
- 1 cup diced mango
- 1/2 cup flaked coconut
- 1/3 cup packed brown sugar
- 1/4 cup chopped macadamia nuts
- 3 tablespoons butter or margarine, softened
- 2 tablespoons milk
Strawberry Cake

Mix all ingredients and pour into greased 9x13 pan
- Strawberry Icing:
- 2 cups self-rising flour
- 2 cups sugar
- 4 eggs
- 1 cup canola oil
- 1 cup milk
- 1/4 cup sweetened strawberries, mashed
- 1 small box dry strawberry jello
- 1/2 stick butter or margarine, softened
- 3-4 cups powdered sugar
- 1/4 cup sweetened strawberries, mashed
Banoffee Pie

- 9 ounces graham crackers or Maria cookies (I used the dulce de leche flavor)

- 1 (14-ounce) can sweetened condensed milk
- 8 tablespoons butter
- Filling:
- 1 + 1/2 cups heavy cream
- 5 medium bananas, ripe but firm
