Chicken Tetrazzini Casserole

1. Preheat oven to 400. Spray a 2 quart casserole or baking dish with nonstick spray and set aside
- 1/2 lb rigatoni pasta
- 1 Tbsp Olive Oil
- 6 oz Cremini Mushrooms, sliced, about 2 cups
- 1 small onion, diced
- 2 carrots, peeled and thinly sliced
- 2 cloves garlic, minced
- 1/2 tsp sea salt & 1/4 tsp freshly ground black pepper, to taste
- 2 cups chicken broth
- 6 oz 2% greek yogurt
- 3 Tbsp finely chopped parsley
- 1/3 cup parmesan cheese, grated
- 1 Tbsp fresh thyme, chopped (about 3 sprigs)
- 1/2 tsp lemon zest
- 1 Tbsp lemon juice
- 1 tsp crushed red pepper flakes
- 5 oz chicken breast, cooked and chopped
- 1 cup frozen peas, thawed
- 1/4 cup sliced, roasted almonds
Delicate Pear Cake with Caramel Sauce

Heat oven to 350°F. Grease and flour 10-inch tube pan
- 1 (15-oz.) can pear halves in light syrup
- 1 (18.25-oz.) pkg. Pillsbury® Moist Supreme® White Cake Mix
- 1/3 cup oil
- 3 egg whites
- 1 cup firmly packed brown sugar
- 1/2 cup butter
- 1 cup whipping cream
- 1 cup whipping cream
- 2 tablespoons sugar
- 1 tablespoon pear brandy or 1 teaspoon vanilla
- 1 (15-oz.) can pear halves in light syrup, well drained
- 1/2 cup finely chopped hazelnuts (filberts) or walnuts, toasted*
4-Layer Coconut Cake

My whole family really enjoyed eating through all four layers of this coconut-ty cake
- COCONUT FILLING:
- 3 cups all-purpose flour
- 2 2/3 cups sugar
- 1 1/2 cups butter, softened
- 1 cup milk
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 teaspoons coconut extract
- 1 teaspoon vanilla extract
- 5 cups large eggs
- 1 (6-ounce) package frozen flaked coconut, thawed
- 1 cup coconut shavings
- 2 cups whipping cream
- 1/4 cup powdered sugar
Peanut Butter & Jelly Monkey Bread

- 1 can Refrigerated Biscuits, 8 count (I used the Simply line from Pillsbury)
- 1/4 cup butter, melted
- 1/4 cup granulated sugar
- 1/4 cup creamy peanut butter, warmed in microwave until liquid like
- 1/2 cup jelly of choice, warmed in microwave until liquid like
- 4 tablespoons heavy cream
Roasted Garlic Potato Soup

Remove white papery skin from each garlic head (do not peel or separate cloves)
- 5 whole garlic heads
- 2 bacon slices, diced
- 1 cup diced onion
- 1 cup diced carrot
- 2 garlic cloves, minced
- 6 cups diced baking potato (about 2 pounds)
- 4 cups low-salt chicken broth
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 bay leaf
- 1 cup 2% low-fat milk
- 1/4 cup chopped fresh parsley
Grandma's Five Cup Creamy Fruit Salad

Make sure your fruit is VERY well-drained or you will have a watery salad
- 1 (11 ounce) can mandarin oranges, drained
- 1 (8 ounce) can crushed pineapple, drained
- 1-2 cups miniature marshmallows
- 1 cup flaked coconut
- 1 cup sour cream (light works great)*
- Don't be scared of the sour cream! I know it sounds weird. I promise that all the sweetness from the other ingredients evens it all out. It's delicious!
Butterfinger Blondies

Preheat oven to 350° Cream butter and sugars in mixing bowl
- 1 cup butter
- 1 cup light brown sugar
- 1/2 cup granulated sugar
- 2 tsp vanilla
- 2 eggs
- 2 1/2 cups all purpose flour
- 1 tsp baking soda
- 1 tsp coarse sea salt
- 2 cups coarsely chopped Butterfinger Bars (approx 16 “Fun Size” bars)
Double Peanut Butter Paisley Brownies

Directions 1 Heat oven to 350°F

- 1-2/3 cups (10-oz. pkg.) REESE'S Peanut Butter Chips
- 1/2 cup HERSHEY'S Syrup
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 cup packed light brown sugar
- 3 eggs
- 1 teaspoon vanilla extract
- 1/4 cup REESE'S Creamy Peanut Butter
- 1 cup granulated sugar
- 1/2 cup (1 stick) butter or margarine , softened
Chocolate Coconut Pie

- 3 cups unsweetened shredded coconut
- 1 cup sweetened shredded coconut
- 2 tbsp xylitol or granulated sugar

- 6 ounces bittersweet chocolate, finely chopped (72% cacao)

- 3/4 cup sugar
- 1/3 cup water
- 1/3 cup heavy cream
