Pay Day Cupcakes

1. Preheat oven to 350 degrees and line pans with cupcake liners
- Cake:
- 1 Box White Cake Mix
- 1/2 cup oil
- 1 whole egg
- 2 egg whites
- 3/4 cup buttermilk
- 3/4 cup sour cream
- 1 tablespoon vanilla extract
- Caramel Frosting:
- 1/2 cup butter, softened
- 1 cup brown sugar
- 1/3 cup heavy cream
- 1/2 tablespoon vanilla extract
- 2-3 cups powdered sugar
- Peanuts to decorate (I used salted peanuts)
Pineapple-Banana Bread

1. In a medium bowl, combine the flour, sugar, salt, baking soda and cinnamon, set aside
- 3 cups all-purpose unbleached flour (15 oz)
- 2 cups granulated sugar (14 oz)
- 1 teaspoon table salt
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 3 eggs
- 1 1/4 cups vegetable oil
- 2 teaspoons vanilla extract
- 1 (8 ounce) can crushed pineapple
- 2 cups mashed ripe bananas (about 3 bananas)
- 1 cup toasted walnuts, chopped (optional)
Heath Crunch Caramel Dip

- 1 8oz. package cream cheese, softened
- 1 Cup brown sugar
- 2 tsp vanilla
- 1 jar caramel ice cream topping
- 11 oz. heath bars, broken in to pieces
- 6 granny smith apples
Three Cheese Potatoes

In a large bowl, combine the first six ingredients
- 3 large potatoes, peeled and cut into 1-inch cubes
- 1 medium onion, chopped
- 3 tablespoons grated Parmesan cheese
- 1 tablespoon minced chives
- 1/2 teaspoon seasoned salt
- 1/4 teaspoon pepper
- 2 tablespoons butter
- 1/2 cup crumbled cooked bacon
- 1/2 cup shredded part-skim mozzarella cheese
- 1/2 cup shredded cheddar cheese
Bacon Swirl Cinnamon Rolls

Mix water, yeast, and sugar together until yeast and sugar are dissolved
- 1/2 cup warm water
- 4 1/2 tsp. dry yeast
- 3 Tbsp. sugar
- 3 1/2 oz. pkg. instant french vanilla pudding mix
- 2 cups cold whole milk
- 1/2 cup melted unsalted butter
- 2 eggs room temperature
- 1 1/2 tsp. salt
- 1 tsp. cardamom
- 6 cups flour (maybe a little more to attain the proper consistency)
- 1 cup very soft butter
- 2 cups dark brown sugar
- 4 Tbsp. cinnamon (I like Saigon)
- 2 pkgs. Pre-cooked bacon
Lemon Cake

Preheat the oven to 350 degrees F
- For the glaze:
- 1/2 pound (2 sticks) unsalted butter, at room temperature
- 2 1/2 cups granulated sugar, divided
- 4 extra-large eggs, at room temperature
- 1/3 cup grated lemon zest (6 to 8 large lemons)
- 3 cups flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon kosher salt
- 3/4 cup freshly squeezed lemon juice, divided
- 3/4 cup buttermilk, at room temperature
- 1 teaspoon pure vanilla extract
- 2 cups confectioners' sugar, sifted
- 3 1/2 tablespoons freshly squeezed lemon juice
Mini Pizzas

HEAT oven to 400ºF. PLACE muffin halves on foil-covered baking sheet; spread with pizza sauce
- 4 English muffins, cut in half, toasted
- 1/2 cup pizza sauce
- 1 cup KRAFT Shredded Mozzarella Cheese
- 1/4 cup KRAFT Grated Parmesan Cheese
- 24 slices OSCAR MAYER Pepperoni
Peaches and Cream Pops

Step 1: Purée 1/2 cup of peaches in blender or food processor until smooth
- 1/2 cup peeled, chopped fresh California peaches
- 1/3 cup peeled, pureed fresh California peaches
- 2/3 cup nonfat vanilla yogurt or Greek yogurt
Orange Gumdrops

Line the bottom and sides of a 9-in
- 1 teaspoon plus 1 tablespoon butter, softened, divided
- 1 cup sugar
- 1 cup light corn syrup
- 3/4 cup water
- 1 package (1-3/4 ounces) powdered fruit pectin
- 1/2 teaspoon baking soda
- 1-1/2 teaspoons orange extract
- 1 teaspoon grated orange peel
- 4 drops yellow food coloring
- 1 drop red food coloring
- Additional sugar, optional
Triple Coconut Cheesecake

Preheat the oven to 350 degrees F
- for the crust
- 1 1/4 cups graham cracker crumbs
- 5 tablespoons granulated sugar
- heaping 1/2 cup shredded sweetened coconut
- 5 tablespoons unsalted butter, melted
- for the filling
- 1 1/2 pounds (3 packages) cream cheese, softened (I leave mine out overnight!)
- 1 cup granulated sugar
- 1/2 ounces cornstarch
- 1 teaspoon vanilla bean paste (use the same amount of pure vanilla extract if you don’t have vanilla bean paste!)
- 1/4 teaspoon kosher salt
- 3 large eggs, lightly beaten
- 7 ounces coconut milk (about half a can’s worth; you can also substitute coconut cream if you have it!)
- 1/2 teaspoon coconut extract (optional)
- for the coconut whipped cream
- 1 cup heavy whipping cream
- 3 tablespoons confectioners’ sugar
- 2 tablespoons coconut milk
- 1/4 teaspoon coconut extract (optional)
- 1/2 cup toasted coconut, for topping
