Crockpot Cinnamon Rolls

1. Coat the crock pot lightly with cooking spray
- Glaze:
- 1 can of biscuits
- 1/4 c. melted butter
- 1/2 c. brown sugar
- 1 tsp. cinnamon
- 1 tsp. vanilla
- pecan pieces (optional)
- 1 1/3 c. powdered sugar
- 2 T. milk
Lemon Pound Cake

Preheat oven to 350F Spray or butter and flour 2 loaf pans or one large Bundt pan
- 3 cups all-purpose flour
- 1 Tbsp baking powder
- 3/4 tsp salt
- 3 cups sugar
- 1 cup unsalted butter, room temperature
- 1/2 cup shortening, room temperature
- 5 large eggs
- 1 cup whole milk
- 6 Tbsp lemon juice
- 1 lemon, zested

Chicken Katsu

Season the chicken breasts on both sides with salt and pepper
- 4 skinless, boneless chicken breast halves - pounded to 1/2 inch thickness
- salt and pepper to taste
- 2 tablespoons all-purpose flour
- 1 egg, beaten
- 1 cup panko bread crumbs
- 1 cup oil for frying, or as needed
Tzatziki Potato Salad

Bring a large saucepan of salted water to a boil
- 2 1/2 pounds Yukon Gold potatoes, peeled and cut into 3/4-inch cubes
- 3/4 cup Greek-style, plain fat-free yogurt
- 1/4 cup mayonnaise
- 3 Kirby cucumbers—peeled, seeded and cut into 1/2-inch cubes
- 1 serrano chile, seeded and thinly sliced
- 1/4 cup coarsely chopped mint
- 1 tablespoon chopped dill
- Salt and freshly ground pepper
Crockpot Pasta E Fagioli Soup

Brown and crumble ground beef
- 1 pound ground beef
- 1 small onion, finely diced
- 2 carrots, finely diced
- 2 stalks celery, finely diced
- 1 can diced tomatoes, undrained
- 1 can dark red kidney beans, drained and rinsed
- 1 can cannellini beans (or white kidney beans), drained and rinsed
- 1 (26 oz.) container beef stock (or 3 cups)
- 1 jar (25 oz.) spaghetti sauce
- 2 tsp. dried oregano
- 2 teaspoons dried parsley
- 1 teaspoon ground black pepper
- 3/4 cup uncooked ditalini pasta (see cook's notes below)
- Salt, to taste (about 1/2 tbsp. kosher salt)
Pineapple Cheese Braid

In a large bowl, dissolve yeast in water
- PINEAPPLE FILLING:
- 2 packages (1/4 ounce each) active dry yeast
- 1 cup warm water (110° to 115°)
- 1/2 cup butter, softened
- 5 tablespoons sugar
- 2 eggs
- 1/4 teaspoon salt
- 4-1/4 to 4-1/2 cups all-purpose flour
- 1 can (8 ounces) crushed pineapple, undrained
- 1/2 cup sugar
- 3 tablespoons cornstarch
- CREAM CHEESE FILLING:
- 2 packages (8 ounces each) cream cheese, softened
- 1/3 cup sugar
- 1 tablespoon lemon juice
- 1/2 teaspoon vanilla extract
- ICING (optional):
- 1 cup confectioners' sugar
- 2 to 3 tablespoons milk
Pomegranate Vanilla Sangria

Add orange slices, apples, pears, cinnamon sticks and pomegranate arils to the bottom of a big pitcher
- 1 large navel orange, sliced
- 1 large apple, chopped
- 1 large pear, chopped
- the arils of 1 pomegranate
- 2 cinnamon sticks
- 2 vanilla beans
- 1 1/2 bottles of red wine (I bought a Spanish red wine)
- 2 cups of sparkling pomegranate soda (bought mine at Trader Joe’s)
- 1/2 cup brandy
- 1/2 cup sugar (possibly more depending on your wine)
- 1 tablespoon vanilla extract
Chewy Ginger Spiced Cookie Sandwiches w/ Honeyed Mascarpone-Chevre Filling

Preheat oven to 350 degrees with a rack positioned in the upper third of the oven
- For the cookies:
- 2 1/4 cups all purpose flour
- 2 tsp baking soda
- 1 1/2 tsp ground ginger
- 1/2 tsp ground cloves
- 1/4 tsp ground cinnamon
- 1/8 tsp ground cayenne pepper
- 1/2 tsp salt
- 1 1/2 sticks butter
- 1 packed cup brown sugar
- 1 egg
- 1 tsp vanilla extract
- 1/3 cup molasses
- 1/3 cup granulated sugar, for rolling
- For the filling:
- 5.5 oz chevre, at room temperature
- 8 oz mascarpone cheese, at room temperature
- 1/4 tsp kosher salt
- 2 tbsp honey
- 1 tsp vanilla extract
