Hash Brown Potato Bake

Heat oven to 350ºF. Grease bottom and side of rectangular baking dish, 13x9x2 inches, with shortening
- 1 can (10 3/4 ounces) condensed cream of mushroom soup
- 1 can (10 3/4 ounces) condensed cream of chicken soup
- 1 container (8 ounces) sour cream
- 1/2 cup milk
- 1/4 teaspoon pepper
- 1 bag (30 ounces) frozen shredded hash brown potatoes, partially thawed
- 8 medium green onions, sliced (1/2 cup)
- 1 cup shredded Cheddar cheese (4 ounces)
Fruity Pasta Salad

Cook rotini to desired doneness as directed on package
- Salad
- 3 oz. (1 cup) uncooked rotini (spiral pasta)
- 1 cup quartered fresh strawberries
- 1 cup fresh pineapple chunks
- 1 cup seedless red grapes, halved
- 2 kiwi fruit, peeled, quartered lengthwise and cut into 1/4-inch slices
- 2 tablespoons slivered almonds, toasted if desired
- Dressing
- 1/2 cup low-fat vanilla yogurt
- 1/2 teaspoon grated lime peel
- 1 tablespoon lime juice
- 2 tablespoons honey
Zuppa Toscana

Place a large stockpot or Dutch oven on the stove over medium heat
- 1 lb. Italian sausage (or half regular, half turkey sausage)
- 1 large onion, chopped
- 3-4 cloves garlic, minced
- 1/2 cup white wine to deglaze the pan
- 1/2 tsp. red pepper flakes
- 2 russett potatoes, peeled and cut into 1/2-inch chunks
- 2 cups fresh kale, chopped
- 3 cups chicken broth
- 2.5 cups water
- 1 cup heavy cream
- Salt and pepper
Chocolate Grasshopper Cheesecake

Heat oven to 300°F. Wrap foil around bottom and side of ungreased 9-inch springform pan
- 30 fudge mint cookies, crushed (about 1 3/4 cups)
- 2 tablespoons butter or margarine, melted
- 4 oz semisweet baking chocolate
- 3 packages (8 oz each) cream cheese, softened
- 1 cup sugar
- 4 eggs
- 1/3 cup green crème de menthe liqueur*
- Sweetened whipped cream
- Crème de menthe thin rectangular candies for garnish, unwrapped, cut in half diagonally
Strawberry Limeade

In a medium saucepan, bring the sugar and water to a boil stirring until the sugar is completely dissolved
- 3/4 cups sugar
- 1/4 cup key lime juice
- 1 cup water
- 2 cups strawberry juice
- 2 liters club soda or sparkling water
- 8 fresh strawberries, sliced
- 10 fresh strawberries for garnish
- 2 key limes, sliced or cut in wedges for garnish
Snickers Cookies

Inside each one of these mildly peanut butter flavored cookies is a gooey surprise
- 1 cup unsalted butter, softened (2 sticks)
- 1 cup creamy peanut butter (Jiff)
- 1 cup granulated sugar
- 1 cup dark brown sugar
- 1/2 teaspoon salt
- 1 tablespoon real vanilla extract
- 2 eggs
- 1 teaspoon baking soda
- 3 1/2 cups all-purpose flour
- 2 bags (11.5 ounce) Snickers Miniatures (Half a bag is for snacking during cooking making.)
Apple Corn Muffins

- 1/4 cup (1/8 lb.) butter
- 2/3 cup brown sugar
- 1 pound sweet apples, such as Fuji, rinsed, peeled, cored, and sliced lengthwise
- 1 cup yellow cornmeal
- 1 cup all-purpose flour
- 3 tablespoons granulated sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup buttermilk
- 1 large egg
- 3 tablespoons salad oil
Pizza Tot Casserole

In a large skillet, cook the beef, pepper and onion over medium heat until meat is no longer pink; drain
- 1 pound ground beef
- 1 medium green pepper, chopped
- 1 medium onion, chopped
- 1 can (10-3/4 ounces) condensed tomato soup, undiluted
- 1 jar (4-1/2 ounces) sliced mushrooms, drained
- 1 teaspoon Italian seasoning
- 2 cups (8 ounces) shredded part-skim mozzarella cheese
- 1 package (32 ounces) frozen Tater Tots
Crab Rangoon Dip

First, soften the cream cheese in the microwave for about a minute
- 2 cans crab meat
- 16 oz. cream cheese (2 blocks)
- 1/2 cup sour cream
- 4 green onions, chopped
- 1 1/2 tsp. Worcestershire sauce
- 2 Tbsp powdered sugar
- 1/2 tsp garlic powder
- 1/2 tsp lemon juice

- 1/2 cup (1 stick) unsalted butter, softened
- 1/4 cup dark brown sugar
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 teaspoon allspice
- 1 teaspoon vanilla
- 1 cup applesauce
- 2 large eggs
- 1 cup raisins
- 1/2 cup chopped walnuts
