Meatball Lasagna

In a large saucepan, combine the first 10 ingredients
- 2 cans (14-1/2 ounces each) diced tomatoes, undrained
- 1 can (8 ounces) tomato sauce
- 1 cup water
- 1 can (6 ounces) tomato paste
- 1 medium onion, chopped
- 1 garlic clove, minced
- 1 tablespoon dried basil
- 4 teaspoons dried parsley flakes
- 2 teaspoons sugar
- Garlic salt to taste
- 8 uncooked lasagna noodles
- 2 packages (12 ounces each) frozen fully cooked Italian meatballs, thawed
- 1 egg
- 1 cup ricotta cheese
- 2 cups (8 ounces) shredded part-skim mozzarella cheese
- 3/4 cup grated Parmesan cheese
Chicken Chipotle Cups

Preheat oven to 350F degrees
- 24 wonton wrappers
- 1 cup shredded cheddar-Jack cheese (or other favorite cheese)
- 1 cup cooked chicken, shredded or small-diced
- 1/2 cup roasted red bell peppers, diced (from the jar works well!)
- 1 cup favorite salsa
- 1/2 tsp. chipotle powder
- 1/2 cup chopped green onions
Cinnamon Bun Pie Pockets

Preheat oven to 350 degrees F
- 2 refrigerated 9-inch pie crusts
- 1 brick (8 oz.) softened cream cheese (I used 1/3 less fat cream cheese)
- 1/4 cup brown sugar, packed
- 1 tsp. ground cinnamon (1/2 for filling, 1/2 for topping)
- 1 Tbsp. sugar
- 2 Tbsp. butter, melted
- 1 cup powdered sugar
- 2-3 Tbsp. milk or heavy cream
Thin Mint Cookie Truffles

In a food processor, pulse the Thin Mints a few times, and then blend them down until they are just crumbs
- 1 (9 oz) package of Girl Scout Thin Mint Cookies (or Keebler Grasshopper cookies)
- 1/2 package (4 oz) cream cheese, softened
- 1 (12 oz) bag Guittard's Green Mint Chips
Homemade Samoas Bars

First, make the crust. Preheat oven to 350F
- Cookie Base:
- 1/2 cup sugar
- 3/4 cup butter, softened
- 1 large egg
- 1/2 tsp vanilla extract
- 2 cups all purpose flour
- 1/4 tsp salt
- Topping
- 3 cups shredded coconut (sweetened or unsweetened)
- 12-oz good-quality chewy caramels
- 1/4 tsp salt
- 3 tbsp milk
- 10 oz. dark or semisweet chocolate (chocolate chips are ok)
Peach Bellini Cupcakes

Preheat oven to 350 degrees
- Cupcakes:
- 1 cup (2 sticks) unsalted butter, at room temperature
- 2 cups sugar
- 1 teaspoon vanilla
- 6 egg whites
- 3 cups all purpose flour
- 3 teaspoons baking powder
- 1/2 teaspoon salt
- 3/4 cup champagne
- 1/4 cup peach schnapps
- 1 small peach, peeled and diced
- Peachy Champagne Frosting
- 3/4 cup (1 1/2 sticks) unsalted butter, at room temperature
- 4 cups powdered sugar
- 1/4 cup champagne
- 1 tablespoon milk
- 1 teaspoon peach schnapps
- 1 teaspoon vanilla
- 2-3 drops red food coloring, if desired
Smores Golden Grahams Treats

In a large sauce pan, melt butter over medium heat
- 1/4 cup butter
- 1 (10 oz) bag regular marshmallows
- 1 box of Golden Graham cereal
- 1-2 cups Chocolate Chips
Toffee Crunch Caramel Cheesecake

For gingersnap crust: Preheat oven to 350°F
- Nonstick vegetable oil spray
- 1 1/2 cups ground gingersnap cookies (about 7 1/4 ounces)
- 5 tablespoons unsalted butter, melted
- 2 tablespoons (packed) golden brown sugar
- 4 8-ounce packages cream cheese, room temperature
- 1 cup (packed) golden brown sugar
- 2 tablespoons (1/4 stick) butter, melted
- 5 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups sugar
- 1/4 cup water
- 1/2 teaspoon fresh lemon juice
- 1 cup heavy whipping cream
- 4 1.4-ounce English toffee candy bars (such as Heath or Skor), chopped
Hot and Spicy Pie

Put a pizza stone or upside-down baking sheet in the oven; preheat to 500 degrees F
- 1 tablespoon sea salt
- 1 tablespoon cayenne pepper
- 1 tablespoon white pepper
- 1 tablespoon garlic powder
- 2 teaspoons coarsely ground black pepper
- 2 teaspoons ground cumin
- 1 teaspoon dried basil
- 2 skinless, boneless chicken breasts
- Extra-virgin olive oil, for brushing
- 2 hot sausage links
- 1 pound pizza dough
- All-purpose flour, for dusting
- Cornmeal, for dusting
- 3/4 cup pizza sauce
- 1 cup shredded mozzarella cheese
- 1/4 cup sliced pepperoni
- 2 tablespoons grated parmesan cheese
- 8 fresh basil leaves, torn

- 1 cup cold water
- 1/4 tsp. ground cinnamon
- 1/8 tsp. ground cloves
