Pineapple Paradise Cookies

- 3 cups all-purpose flour
- 1/2 teaspoon baking soda
- 3/4 cup dark brown sugar, firmly packed
- 3/4 cup white sugar
- 1 cup salted butter, softened
- 1 large egg
- 2 teaspoons vanilla extract
- 1 (8 ounce) can crushed pineapple or 1 cup fresh finely chopped pineapple, well drained
- 1 tablespoon pineapple juice
- 1/4 cup sweetened flaked coconut (optional)
Crockpot Corned Beef and Cabbage Recipe

Lightly butter or spray a 5 to 6-quart crockpot; layer potato slices over bottom of pot with carrots
- 6 to 8 medium potatoes, peeled and cut into thick (about 1/2-inch) slices
- 3 medium carrots, thinly sliced
- 2 ribs celery, thinly sliced
- 1 corned beef brisket, about 3 pounds
- 1 cabbage, about 2 pounds
- 1/2 teaspoon black pepper
- 1 1/2 cups water
Maple Bacon Biscuits

Preheat the oven to 475F. Lightly grease a 9” round pan (a springform pan is helpful but not required)
- FOR THE SYRUP
- 1/2 pound bacon, cooked until medium brown
- 1/3 c brown sugar
- 1/4 c all‐purpose flour
- 1/4 c maple syrup
- 2 T melted butter
- FOR THE BISCUITS
- 2 c all‐purpose flour
- 2 ‐1/2 t of baking powder
- 1/4 t baking soda
- 1 t salt
- 1/4 c vegetable shortening
- 2 T butter
- 3/4 c low‐fat buttermilk

Roasted Tomato Soup With Grilled Cheese Croutons

Heat the oven to 400°
- For Grilled Cheese Croutons:
- 6 cups (3 pints) cherry tomatoes
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 2 tablespoons unsalted butter
- 2 garlic cloves, minced
- 1 cup chopped onion
- 1 (28-ounce) can diced tomatoes
- 4 cups chicken broth
- 1/2 teaspoon thyme
- 1 cup whipping cream
- 1/4 cup unsalted butter, softened
- 1/4 teaspoon thyme
- 6 thin slices of bread
- 3 ounces Cheddar, thinly sliced
