Strawberry Rhubarb Jam

Place rhubarb and 1 cup of water in a large pot
- 1 1/2 cups of rhubarb, diced (about two stalks)
- 1 cup of water, for simmering rhubarb
- 8 cups of roughly chopped strawberries (about three 16-ounce containers)
- 1 cup of orange juice
- 4 tablespoons of low-sugar pectin
- 1 cup of sugar
- 1/2 cup of honey

Peachy Gingerbread Cake Roll

- FILLING:
- 4 eggs
- 1/2 cup sugar
- 1/2 cup packed dark brown sugar
- 1/4 cup water
- 3 tablespoons butter, melted
- 3 tablespoons molasses
- 1 teaspoon vanilla extract
- 1-1/3 cups all-purpose flour
- 2 teaspoons pumpkin pie spice
- 1 teaspoon ground cinnamon
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- Confectioners' sugar
- 3 packages (two 8 ounces, one 3 ounces) cream cheese, softened

Texas Pork Burritos

Sprinkle pork with salt and pepper
- 1 boneless pork shoulder butt roast (3 to 4 pounds), cubed
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 2 tablespoons canola oil
- 2 cans (10 ounces each) green enchilada sauce
- 1 large onion, thinly sliced
- 2 medium carrots, thinly sliced
- 2 cans (2-1/4 ounces each) sliced ripe olives, drained
- 1/2 cup chicken broth
- 2 tablespoons ground cumin
- 3 garlic cloves, minced
- 2 teaspoons dried oregano
- 2 tablespoons all-purpose flour
- 1 cup (8 ounces) sour cream
- 1/2 cup minced fresh cilantro
- 10 flour tortillas (8 inches), warmed

Ham Pineapple Cheddar Quiche

- 2 tablespoons boiling water
- QUICHE FILLING
- 1 1/2 cups shredded sharp Cheddar cheese, about 6 ounces
- 3/4 cup finely chopped cooked ham, about 4 ounces
- 3 medium green onions, sliced, about 3 tablespoons
- 1 (8 ounce) can pineapple tidbits in juice, well drained
- 3 eggs
- 3/4 cup half-and-half

Bacon Ranch Crockpot Chicken

A hearty slow cooker meal of creamy chicken over pasta with bacon and full of Ranch flavor!
- 2 butterball turkey bacon strips, cooked and shredded
- 1 teaspoon garlic, minced
- 1 package ranch dressing mix
- 1 can (10.75 ounce) condensed cream of chicken soup (98% fat free)
- 1 cup fat-free sour cream
- 16 ounces chicken breasts, frozen or defrosted/raw
- 8 ounces pasta, cooked (I used rigatoni)

Apple Buttery Pear Pie

- 1 1/2 cups all-purpose flour, sifted
- 3 eggs & 2 egg whites
- For dusting:
- 3 tablespoons of cinnamon and sugar, mixed

- 1 tablespoon half-and-half cream
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 cup finely chopped pecans
- Additional chopped pecans
- Halved red maraschino cherries or red jelly of your choice
