This dish is fairly quick to prepare
- 1 small onion (sliced)
- 2 cloves garlic (minced)
- 1 package pancit noodles
- 3 boneless, skinless chicken thighs
- 1 cup cabbage (shredded)
- 1 green bell pepper (julienned)
- 1 cup carrots (julienned)
- 2 stalks celery (sliced on a diagonal)
- 1 tablespoon soy sauce
- 1-1 1/2 cups chicken stock
- Salt and pepper to taste
- 2 calamansi or 1 lemon, juiced
Meatball Sub Casserole

1. Arrange bread slices in a single layer in an ungreased 13″x9″ baking pan; set aside
- 1 loaf Italian bread, cut into 1-inch thick slices
- 8-oz. pkg. cream cheese, softened
- 1/2 c. mayonnaise
- 1 t. Italian seasoning
- 1/4 t. pepper
- 2 c. shredded mozzarella cheese, divided
- 1-lb. pkg. frozen meatballs, thawed
- 28-oz. jar pasta sauce
- 1 c. water
Peanut Butter Smores Turnovers

1. Preheat oven to 400°F
- 1 box Puff Pastry (2 sheets), thawed
- 3 whole graham crackers, gently broken into fourths
- 9 small milk chocolate bars (I used Hershey's .49 oz. bars)
- 1/2 cup creamy peanut butter
- small bowl of water
- 1 egg whisked with 1 Tablespoon water (to make egg wash)
- 1/2 cup jarred Marshmallow Creme (or Fluff)
Pecan Bars

Heat oven to 350°F. Unroll dough and press in bottom and 1/2 inch up sides of a 9x13-inch pan
- 1 can (8 oz) refrigerated crescent rolls
- 3/4 cup chopped pecans
- 1/2 cup sugar
- 1/2 cup corn syrup
- 2 Tbsp butter or margarine, melted
- 1 tsp vanilla
- 1 egg, beaten
Orange Slice Cookies

Preheat oven to 350 degrees F (175 degrees C)
- 1 cup butter, softened
- 1 cup brown sugar
- 1 cup white sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup rolled oats
- 1 cup flaked coconut
- 1 cup chopped orange slices candy

- Cream Cheese Frosting:
- 1 1/4 Cups Cake Flour, sifted
- 1 1/4 Cups Ultra-Fine Sugar
- 11 Egg Whites, room temperature
- 2 Teaspoons Vanilla Extract
- 2 oz. Blue Food Coloring
- 1 and 1/2 Teaspoons Cream of Tartar
- 1 Tablespoon Cocoa Powder
- 1/4 Teaspoon Salt
- 1 1/2 Cups Blueberries, fresh not frozen
- 10 tb butter, softened
- 16 oz cream cheese
- 3 cups powdered sugar
- 4 Teaspoon vanilla extract
Cucumber, Vidalia Onion and Cream Cheese Sandwiches

In a small bowl, beat together the cream cheese, olives, and pepper
- 2 ounces cream cheese, softened
- 1/4 cup chopped, pitted kalamata olives
- 1/2 teaspoon freshly ground black pepper
- 8 slices white bread, crusts removed if desired

Ground Turkey Paprikash and Macaroni

Bring a pot of water to boil for pasta
- 1/2 pound elbow macaroni
- Salt
- 1 tablespoon extra-virgin olive oil, 1 turn of the pan
- 1 tablespoon butter
- 1 package, 1 1/3 pounds average weight, ground lean white turkey
- 2 to 3 cloves garlic, chopped
- 1 medium onion, chopped
- 1 red bell pepper, seeded and chopped
- 2 tablespoons sweet paprika
- 1 teaspoon ground cumin
- 1 teaspoon dried marjoram
- Black pepper
- 1 cup chicken stock, available in small 8 ounce paper containers on soup aisle of market
