Beef and macaroni pie (Pastitsio)

- 4 tbsp olive oil
- 1 onion, finely chopped
- 4 cloves garlic, finely chopped
- 2 sticks celery, finely chopped
- 1 kg lean minced beef
- 200 ml red wine
- 400 g can chopped tomatoes
- 2 tbsp tomato purée
- 10 cm cinnamon sticks
- 1/4 tsp ground cloves
- 1 tbsp dried oregano, Greek if possible
- 2 tbsp fresh chopped oregano
- 3 fresh bay leaves
Cinnamon Maple Cookie Rings

Step 1: In a large bowl, combine flour and sugar with an electric mixer set on medium speed
- Dough:
- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 2 sticks (1 cup) salted butter, chilled and sliced into 8 pieces
- 1/4 cup maple syrup, chilled
- 2-4 tablespoons ice water
- Filling:
- 1/4 cup granulated sugar
- 4 teaspoons ground cinnamon
- Topping:
- 1/4 cup maple syrup
Watermelon Salsa

In a large bowl, combine the first 11 ingredients
- 4 cups diced seedless watermelon
- 1 cup diced green pepper
- 1 cup diced sweet red pepper
- 1 cup diced red onion
- 1 cup sliced fresh carrots
- 2 jalapeno peppers, seeded and cut into rings
- 2 tablespoons rice vinegar
- 1 tablespoon canola oil
- 1 cup chopped fresh cilantro
- 2 tablespoons chopped fresh mint
- 2 tablespoons chopped fresh basil
- 1/4 cup chopped unsalted peanuts
Red Hot Applesauce Jello

Dissolve cinnamon candies in water in a saucepan over medium heat
- 1/2 cup cinnamon red hot candies
- 1 cup water
- 1 (3 ounce) package cherry-flavored gelatin (such as JELL-O®)
- 2 cups applesauce
Baked Cauliflower Poppers

Preheat oven to 400 degrees Wash and clean the cauliflower
- 2 heads of cauliflower
- 1/4 cup of olive oil
- 1 1/2 teaspoon of salt

Mudslide Cupcakes

1. For the cupcakes: Preheat the oven to 350 degrees, and prepare your cupcake pan with your desired liners
- For the cupcakes:
- 3 eggs, separated and at room temperature
- 3/4 cup granulated sugar
- 1/2 cup (1 stick) unsalted butter, room temperature
- 1 cup light brown sugar, packed
- 2 and 1/4 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 and 1/2 teaspoons baking soda
- 3/4 cup strong cold coffee
- 3/4 cup Kahlua
- For the Kahlua buttercream:
- 6 tablespoons unsalted butter, room temperature
- 3 cups (or more, if needed) powdered sugar
- 3 tablespoons unsweetened cocoa powder
- 4 tablespoons Kahlua
- 3 tablespoons hot coffee
- For the Bailey’s buttercream:
- 16 tablespoons (2 sticks) unsalted butter, room temperature
- 3 cups powdered sugar
- 2 teaspoons vanilla extract
- 4 tablespoons Bailey’s Irish Cream
- 4 ounces bittersweet chocolate, shaved in curls
Robust Italian Salad

In a large salad bowl, combine the first five ingredients
- 1 package (16 ounces) ready-to-serve salad greens
- 1 package (2-1/2 ounces) sliced pastrami, cut into 1/2-inch pieces, optional
- 1 cup (4 ounces) shredded part-skim mozzarella cheese
- 4 plum tomatoes, chopped
- 1 teaspoon Italian seasoning
- 1/3 cup Italian salad dressing
- 1 cup salad croutons
- Sliced ripe olives, optional
Mexican Dorito Casserole

1. Pre-heat oven to 350-f degrees
- 2 c. shredded cooked chicken
- 1 c. shredded cheese (or more if you are a cheese hound)
- 1 can cream of chicken soup
- 1/2 cup milk
- 1/2 cup sour cream
- 1 can Ro-tel tomatoes (canned tomatoes with jalepenos-mild)
- 1/2 packet taco seasoning (or more- to taste)

Heat oven to 350°F (325°F for dark or nonstick pan)
- 1 roll (16.5 oz) Pillsbury® refrigerated sugar cookies
- 1 bag (12 oz) semisweet chocolate chips (2 cups)
- 3 cups Fisher® Chef's Naturals® Chopped Pecans
- 1/2 cup LAND O LAKES® Butter
- 1/2 cup packed light brown sugar
- 1 jar (12.25 oz) caramel ice cream topping
- 1 cup graham cracker crumbs (16 squares)
