Skinny Slow Cooker – Mexican Shredded Beef

Place the onions, jalapeño, and garlic in the bottom of a 4 quart slow cooker
- 2 lb chuck roast
- 3 cloves garlic, minced
- 1 jalapeño, seeded and finely diced
- 1 small onion, finely diced (about Â1/2 cup)
- 1 (8 oz) can tomato sauce
- 1/4 cup lime juice
- 1 tbsp chili powder
- 1/2 tsp cumin
- 1/4 tsp cayenne pepper
- Salt and pepper

In a large Dutch oven or stockpot, add chicken stock and heat over medium heat
- 3 cups chicken stock
- 2 skinless, chicken breasts (I used 1.3 lbs total between the two)
