Crispy Chipotle Potato Skins

- 4 large uncooked potato(es), baking-variety, cooked, cooled and quartered lengthwise
- 1 1/2 Tbsp olive oil
- 1 tsp chili powder, or chipotle chili powder
- 1/4 tsp hot pepper sauce
- 6 slice(s) cooked Canadian-style bacon, finely chopped
- 3/4 cup(s) low-fat shredded Cheddar cheese
- 2 medium fresh tomato(es), diced
- 3 medium uncooked scallion(s), finely chopped
- 1/2 cup(s) reduced-fat sour cream
Avocado, Tomato and Mango Salsa Recipe

Combine the mango, avocado, tomatoes, jalapeno, cilantro, and garlic in a medium bowl
- 1 mango – peeled, seeded and diced
- 1 avocado – peeled, pitted, and diced
- 4 medium tomatoes, diced
- 1 jalapeno pepper, seeded and minced
- 1/2 cup chopped fresh cilantro
- 3 cloves garlic, minced
- 1 teaspoon salt
- 2 tablespoons fresh lime juice
- 1/4 cup chopped red onion
- 3 tablespoons olive oil
Southern-Style Chicken and Dumplings

Place the chicken, onions, carrots, and celery in a large stock pot and cover with water
- Chicken:
- 1 large fryer chicken (4-5 lbs.), neck and gizzards removed
- 1 large onion, peeled and cut in half
- 3 carrots, cut into large pieces
- 3 stalks of celery, cut into large pieces
- Kosher salt, to taste
- Pepper, to taste
- Dumplings:
- 3 cups cake flour
- 3/4 tsp. baking soda
- 3/4 tsp. salt
- 4 1/2 tbsp. shortening*
- 1 cup milk
- I imagine you could use butter, but I haven’t tried it. I’ve never been a fan of shortening, but I stuck to the recipe because I didn’t want to mess with its “right”-ness. You know Cracker Barrel and Southern grandmas aren’t afraid of using shortening.
Candied Sweet Potatoes

Preheat oven to 400 degrees F (200 degrees C)
- 4 pounds sweet potatoes, quartered
- 1 1/4 cups margarine
- 1 1/4 cups brown sugar
- 3 cups miniature marshmallows, divided
- ground cinnamon to taste
- ground nutmeg to taste
Flat Belly Smoothie

Directions 1Place all the ingredients in a blender and mix until smooth
- 3 ounces vanilla nonfat Greek yogurt
- 1 tablespoon almond butter
- 1/2 cup frozen blueberries
- 1/2 cup frozen pineapple
- 1 cup kale
- 3/4 cup water
Pumpkin Pie Pancakes

Mix all ingredients and cook in skillet
- 1/4 cup Egg whites
- 1/4 organic, no sugar added pumpkin puree
- 1 scoop organic vanilla protein powder
- 1 Tbs. Ground Flaxseed
- 1 tsp. cinnamon
- pinch of nutmeg
- pinch of pumpkin spice (optional)
- 4 pecans finely chopped
- Top with a little powdered stevia

Ranch Style Chicken

Raspberry Beer Cocktail

In a large container stir together the first 4 ingredients
- 1 cup of fresh raspberries or frozen
- 4 bottles of corona (12oz) beer, chilled
- 1 container frozen raspberry lemonade concentrate, thawed or pink lemonade
- 1/2 cup good quality vodka
- Garnish: lemon slices, or raspberries.
