White chicken enchiladas

Preheat oven to 350 degrees
- 8 flour tortillas
- 2 cups cooked, shredded chicken (I used half of a rotisserie chicken)
- 2 cups shredded Monterey Jack cheese
- 3 Tbsp butter
- 3 Tbsp flour
- 2 cups chicken broth
- 1 cup sour cream
- 1 (4 oz) can diced green chilies
Goulash (Freezer Meal)

1. Brown Ground beef with onion powder and garlic powder
- 1 lb ground beef
- 1 can tomato soup
- 6 oz can tomato paste
- 2 cups uncooked elbow macaroni (I used whole wheat noodles)
- 2 Tbsp Italian seasoning (more to taste)
- 1 can (15oz) corn, drained
- 1 tsp garlic powder
- 1 tsp onion powder
- 1-2 cups shredded cheese (depending on your “cheesiness” preference)
Amaretto-Soaked White Chocolate Cherries

With a knife, make small ¼-inch cuts into each cherry
- 40 fresh unpitted cherries (cherries with pits works fine, too)
- 750 mL bottle of amaretto
- 12 ounces white chocolate chips
- Vegetable oil

Chicken, Bacon and Cream Cheese Mini Taquitos

1.Cook the bacon in a 10-inch skillet over medium heat until crisp
- 1/3 of a 16-ounce package bacon (about 6 slices), chopped
- 1/2 of an 8-ounce package cream cheese, softened
- 2 cans (12.5 ounces each) Swanson® Premium White Chunk Chicken Breast in Water, drained (or used leftover cooked chicken)

- 1 medium avocado, pitted, peeled and cut up
- 1/4 cup mayonnaise

- 1 tablespoon milk

- 1/8 teaspoon dried parsley flakes
- 1/8 teaspoon onion powder
- dash Dried dill weed
- dash Garlic powder
- dash Ground black pepper
Skinny Spinach and Artichoke Dip

- 1 (8 ounce) package of fat-free cream cheese, softened or whipped
- 1/4 cup low fat mayonnaise
- 1/4 cup grated low fat Parmesan cheese
- 1/4 cup grated low fat Romano cheese
- 2 cloves garlic, peeled and minced
- 1/4 tsp. garlic salt
- 1/2 (14 ounce) can artichoke hearts, drained and chopped
- 1/2 cup frozen chopped spinach, thawed and drained
- 1/4 cup shredded low fat mozzarella cheese
- Salt and pepper to taste (you don't need much)

- 1/2 cup ketchup
- 1/4 cup Worcestershire sauce
- 1/4 cup soy sauce
- Freshly ground black pepper
- 8 to 12 potato rolls
