Queso Blanco

Directions Heat the oil in a saute pan
- 1 tablespoon olive or vegetable oil
- 1/4 cup white onion, diced
- 1 large jalapeno or serrano, seeds and stem removed; diced
- 16 ounces white American cheese, shredded or cubed
- 4 ounces Monterrey Jack cheese, shredded
- 3/4 cup cream or half-and-half
- 1 (10 oz.) can diced tomatoes and green chilies
- 1-2 roma tomatos, seeds removed and diced
- 1 small bunch cilantro, roughly chopped
Strawberry Lemonade

- 2 cups fresh strawberries
- 3/4 cup freshly squeezed lemon juice, about 5 lemons
- 1/2 cup mild honey
- Chilled Water (we used distilled)

- 8 ears corn, shucked
- 1 red onion, finely diced
- 5 Tbsp cider vinegar
- 2 Tbsp olive oil

- 3/4 cup thinly sliced fresh basil leaves
French Cranberry-Apple Pie

Heat oven to 375. Place pie crust in 9" glass pie plate as directed on box
- CRUST:
- 1 box Pillsbury refrigerated pie crusts, softened.
- FILLING:
- 4 cups sliced peeled cooking apples (4 med.)
- 2 cups fresh or frozen cranberries (or 1 cup dried craisins)
- 1/2 cup granulated sugar
- 1/4 cup all-purpose flour
- 1/4 cup packed brown sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- TOPPING:
- 1/2 cup all-puropse flour
- 1/3 cup packed brown sugar
- 1/4 teaspoon ground cinnamon
- dash nutmeg
- 1/4 cup butter or margarine
- 1/3 cup chopped pecans (optional)

- 1 pint grape tomatoes, halved
- 1 yellow bell pepper, seeded and chopped (about 1/2-inch pieces)
- 1 (15-ounce) can black beans, rinsed and drained
- 1/4 cup small diced red onion
- 1 jalapeno pepper, seeded and minced
- 1/2 teaspoon freshly grated lime zest
- 1/4 cup freshly squeezed lime juice (from about 2 limes)
- 1/4 cup extra-virgin olive oil
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1 medium garlic clove, finely minced
- 1/8 teaspoon ground cayenne pepper

Mix soup mix and tomatoes and pour into crock pot
- 3-4 chicken breasts cubed
- 2 – 14oz cans Italian diced tomatoes
- 1 envelope of Lipton Savory Herb & Garlic Soup mix (next to onion soup mix)
- Bow tie pasta and shredded Parmesan cheese
Roasted Veggie Flat Bread

Preheat the oven to 400 degrees F
- 16 oz. refrigerated or frozen pizza dough (or make your own)
- 6 oz. soft goat cheese or herb cheese spread, divided
- 3/4 cup grated Parmesan cheese, divided
- 3 Tb. chopped fresh dill, divided
- 1 small red onion, sliced thinly
- 1 small zucchini, sliced thinly
- 2 small tomatoes, thinly sliced
- 1 small red pepper, thinly sliced into rings

- 6 tbsp. sugar
