Sparkling Lime-Mint Quencher

Add the first 3 ingredients to a large glass, stir to combine
- 1/2 cup freshly squeezed lime juice
- 1/2 cup fresh mint leaves, loosely packed
- 2 tablespoons pure maple syrup, more to taste (stevia or agave nectar can be used as an alternative...you may prefer your drink a little sweeter as this recipe is slightly tart)
- 2 cups sparkling seltzer water (be sure it says Sparkling Seltzer Water and not club soda or tonic water...seltzer water contains only carbonated water)
- 1 cup ice
Crock Pot Broccoli Cheese Soup

Heat up a skillet on medium heat and melt butter – Sautee onions for about 10 minutes
- 1 (32 ounce) bag frozen chopped broccoli – I do not use the stem
- 2 (10 3/4 ounce) cans cheddar cheese soup
- 2 (12 ounce) cans evaporated milk
- 1/2 Teaspoon of Garlic Powder
- 1 Clove of Minced Garlic
- Cheddar Cheese
- 1 Tablespoon of Butter or Margarine
- 1/2 Teaspoon of Onion Powder
- 1 teaspoon black pepper
- 1 Cup of Chopped Onions
Peppermint Kiss Oreo Balls

Allow the cream cheese to come to room temperature
- 1 regular package oreos, about 36 cookies
- 1 package regular cream cheese, 8 oz, softened
- 2 tbsp International Delight Peppermint Mocha creamer
- Peppermint kisses
- Chocolate and/or vanilla almond bark for dipping the oreo balls
- Crushed candy canes
Crock Pot Rum Chata- White Hot Chocolate

Add whole milk, white chocolate chips, vanilla extract and sweetened condensed milk to a 4 quart crock-pot
- 6 cups whole milk
- 2 cups white chocolate chips we like Ghirardelli brand
- 14 ounces canned sweetened condensed milk
- 1 tablespoon pure vanilla extract
- 9 ounces RumChata liquor , about 6 shots
- For Serving (Optional)
- whipped cream
- ground cinnamon
Lemon Bread

Mix the sugar and butter together until creamy
- Glaze:
- 1/2 cup butter, softened
- 1 cup sugar
- 2 eggs
- grated rind of 1 lemon
- 1 1/2 cups flour
- 1 teaspoon baking powder
- pinch of salt
- 1/2 cup milk
- 1/2 cup sugar
- juice of 1 lemon
Lasagna Rolls | Full Fork Ahead

To make the sauce: Melt the butter in a heavy medium saucepan over medium-low heat
- For the sauce:
- 4 tablespoons unsalted butter
- 2 2/3 tablespoons all-purpose flour
- 2 1/2 cups whole milk
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- Pinch ground nutmeg
- For the lasagna:
- 1 (15-ounce) container whole milk ricotta cheese
- 1 (10-ounce) package frozen chopped spinach, thawed, squeezed dry
- 1 cup plus 2 tablespoons grated Parmesan
- 3 ounces thinly sliced prosciutto, chopped
- 1 large egg, beaten to blend
- 3/4 teaspoon salt, plus more for salting water
- 1/2 teaspoon freshly ground black pepper
- 1 to 2 tablespoons olive oil
- 12 uncooked lasagna noodles
- 1 jar of your favorite marinara sauce (24 oz. size)
- 1 cup shredded mozzarella (about 4 ounces)
Cheesy Au Gratin Potatoes

Melt the butter in a large pot over medium heat
- Potatoes:
- 3 tablespoons butter
- 1 large yellow onion, chopped
- 1/4 cup all-purpose flour
- 1 1/2 cups low-sodium chicken broth
- 1 cup milk
- 1 1/2 teaspoons salt
- 1/2 teaspoon pepper
- 1/2 teaspoon dried thyme
- 2 cups shredded sharp cheddar cheese (8 ounces)
- 26-ounce bag frozen shredded hash browns
- 1/2 cup light sour cream
- Topping:
- 3 cups cornflakes, lightly crushed
- 2 tablespoons butter, melted
Pineapple Ice Cream Float

Preheat the oven to 425 degrees
- 1 pineapple (about 4 pounds), top trimmed
- 1 cup granulated sugar
- 1/2 tablespoon pure vanilla extract
- 3 tablespoons packed dark brown sugar
- 1 quart vanilla ice cream
- 1 liter club soda, chilled
- Note: In place of the fresh pineapple, you can drain two 8-ounce cans crushed pineapple, roast it, and skip making the syrup.

1. Heat the shortening in a deep skillet
- 4 beef cube steaks
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon black pepper
- 3/4 teaspoon salt
- 1 1/2 cups buttermilk
- 1 egg
- 1 tablespoon hot pepper sauce (I used Tabasco)
- 3 cups vegetable shortening for deep frying
- Gravy Ingredients
- (If you're not using the packaged gravy)
- 1/4 cup all-purpose flour
- 4 cups milk
- kosher salt and ground black
Jalapeño Popper Chicken

Preheat the oven to 375 and place an ovenproof rack onto a rimmed baking dish
- 1/2 cup panko
- 2 tsp. canola oil
- 1.5 – 2 tsp. taco seasoning or mixture in notes*
- 1 egg
- 2 oz. reduced fat cream cheese
- 1/4 cup shredded cheddar cheese (we used 2%)
- 1-2 jalapeño peppers, seeds and ribs removed, minced
