Smothered Pork Chops {Slow Cooker}

In a large skillet over medium heat, fry bacon until lightly browned, about 5-6 minutes
- 5 5 5 slices bacon, chopped
- 6 6 3/4-inch bone-in pork loin chops, about 3/4-inch thick
- Salt and Pepper
- 2 2 1/2-inch yellow onions, peeled, halved and sliced into 1/2-inch thick half moons
- 1 1 1 teaspoon plus 1 tablespoon light brown sugar
- 1/4 1/4 2 cup plus 2 tablespoons cold water
- 3 3 3 garlic cloves, minced
- 1 1 1 teaspoon dried thyme
- 3 3 3 cups low-sodium chicken broth
- 1 1 1 tablespoon soy sauce
- 2 2 2 bay leaves
- 1 1 1 tablespoon cornstarch
- 1 1 1 tablespoon cider vinegar
- 2 2 2 tablespoons fresh parsley, chopped

- Optional:
- 1/2 teaspoon almond extract
- 1/2 teaspoon butter extract
- 6 packets Stevia or sweetner of your choice, to taste
- 1/4 cup vanilla protein powder
- 8 Egg whites, room temperature
- 1/2 teaspoon cream of tartar
- Sprinkles to taste, light whip cream for topping
- Cream of tartar can be found in any grocery store in the spice section. It is necessary, because it helps the egg whites to form and hold a stiff peak.
Garlic Margherita Chicken & Zucchini

Chicken: 1.Preheat (cast iron) skillet on medium heat add oil to coat
- Zucchini & Tomatoes:
- 1 lb chicken breast, or tenders cut into 1" pieces
- 1 tsp olive, coconut or avocado oil
- 1 large garlic clove, crushed
- 1/4 tsp sea salt
- Ground black pepper, to taste
- 1.5 lbs zucchini, cut into half moon shapes
- 1.5 cups fresh, halved grape tomatoes
- 1 tsp olive, coconut or avocado oil

- Garnish:
- 1/4 cup fresh chopped Basil
- A sprinkle of Italian (high-quality) cheese such as natural parmesean (optional)
Banana Pudding with Nilla Wafers

Whisk together sugar, cornstarch, nutmeg and salt in a medium saucepan, then whisk in half and half and egg yolks
- 1/3 Cup Sugar
- 1 Tbsp. Cornstarch
- 1/4 tsp. Nutmeg
- 1/8 tsp. Salt
- 1 1/2 Cups Half and Half
- 2 Egg Yolks
- 1 Tbsp. Unsalted Butter
- 2 tsp. Vanilla
- 3-4 Bananas, sliced
- 24 Nilla wafers, coarsely crushed
- Whipped Cream, for serving
Cheesy Zucchini Bake

Cut your zucchini and squash into little half moons and slice up your basil and green onion
- 2 medium zucchini
- 2 medium yellow squash
- 5 tblspns fresh basil
- 3 tblspns green onion
- 1 can diced tomatoes
- 1 tblspn red pepper flakes
- 1/2 tspn thyme
- 2 tspns garlic powder
- 1/2 cup + 1/2 cup grated low-fat cheese
- (I used 1/4 cup cheddar and 1/4 cup mozzarella to make up each half cup)
- 1/2 cup coarsely grated Parmesan
- Salt and fresh ground black pepper to taste
