- 1 pound shredded, cooked chicken
- 1 (15 ounce) can whole peeled tomatoes, mashed
- 1 (10 ounce) can enchilada sauce (I used hot to give it a kick)
- 1 medium onion, chopped
- 1 (4 ounce) can chopped green chile peppers
- 2 gloves garlic, minced
- 2 cups of water
- 1 (14.5 ounce) can chicken broth
- 1 tsp. cumin
- 1 tsp. chili powder
- 1 tsp. salt
- 1/4 tsp. black pepper
- 1 bay leaf
- 1 (10 ounce) package frozen corn
- 1 Tbsp. chopped cilantro
- 7 corn tortillas
- 1 lime
- vegetable oil

Baby Back Ribs

1. Mix the brown sugar, garlic powder, and pepper
- 1 rack of pork baby back ribs
- 1/2 C brown sugar
- 1 T garlic powder
- 1 tsp pepper
- 6 oz cola (Coke or Dr. Pepper work well)

Bacon-Wrapped Chicken Breasts with Chile Cheese Sauce

Preheat oven to 400°F. Line a rimmed baking sheet with aluminum foil; set aside
- 8 slices bacon
- 4 boneless, skinless chicken breast halves, cut in half lengthwise (making 8 long pieces)
- 1 10.75-ounce can condensed cheddar cheese soup
- 1/3 cup milk
- 1 teaspoon chopped canned chipotle peppers or bottled chipotle hot pepper sauce (or to taste)
- Dash Worcestershire sauce

- Caesar Dressing:
- 1 1/2 lb Chicken breasts (fresh or frozen)
- 1 cup Chicken stock (or 1 chicken bullion cubes + 1 cups water)
- 1 cup Plain low fat Greek yogurt (or dairy free yogurt)
- 1/2 cup Parmesan cheese, grated
- 1 tbs Worcestershire sauce (or balsamic vinegar)
- 1 tsp Garlic powder
- 1/2 tsp Onion powder
- 1/2 tsp Mustard (dijon or yellow)
- 1 1/2 tbs Lemon juice (or juice from one lemon)
- 1 tbs White wine vinegar or (white vinegar)
- 1/2 tsp Salt and pepper (or to taste)
- Lettuce Wraps:
- 8 Romain lettuce leaves, rinsed and dried 2
- Optional: Additional parmesan cheese for topping (i prefer shaved)
- 1 You could also use pre-shredded/pre cooked chicken or rotisserie chicken for this recipe.
- 2 I recommend buying one head of romaine lettuce, this will give you plenty of lettuce for this recipe. This would allow you to have 2 lettuce wraps per serving. You could also swap out the lettuce wraps with 4 whole grain/low carb tortillas or buns.
Lemon and Rosemary Chicken
